Acid Based Cupcake - If you have sour cream and citrus fruits, this is the recipe for you

  • Making Acid based cupcakes from start to finish. This ACID based cupcake recipe is made with lemons and sour cream. Very fluffy, versatile and it pairs nicely with a lot of flavours. Since it's acid based you can change the underlying flavour from lemon to lime, orange, bergamot, grapefruit, calamansi, yuzu and other citrus fruits. This cupcake recipe pairs nicely with jam, curds, buttercream or just eaten on its own. The world is your oyster or in this case, the world is your cupcake.

    250g Unsalted Room Temperature Butter
    450g Caster Sugar
    6 nos or 300g Whole Eggs
    15g or 2 whole Lemons Finely Zested
    240g Sour Cream
    320g Plain Flour
    1 1/2 Teaspoon Baking Powder

    I was able to sneak this bake in-between another baking project after work today. I used Meyer Lemons for the citrus zest. Oh, such a lovely cupcake , indeed. Photos have been posted on IG/FB. I have several ideas on how I plan to bake this again - perhaps for Easter or for a brunch with my daughter's in-laws.

    Hi Avery, I was wondering is it possible to use yogurt or greek yogurt to replace sour cream?

      Hi Syahirah, you can use Yogurt or Greek yogurt but there are some yogurts that are stiffer and some loose, this might effect the over all bake/ consistency. You might have to loosen with some milk. I am glad you enjoyed the video.
