I’m sorry you guys wanted the reverse seared chicken to win but we all simply agreed that the fried chicken was more exciting to eat in general than a plain salt and pepper chicken. We’ll try to pick stuff you guys like but the goal is to be authentic as possible when voting. Good news though if you wanted the reverse seared chicken to win here’s how you can combine it at home: make the reverse sear recipe, make either piccata sauce (the emulsified or traditional) and dress the reverse seared chicken after searing it, resting, and slicing. If you make the traditional piccata sauce, just be sure to deglaze the pan after searing and follow the same steps in the recipe here. Hope that helps! Love u!
dw about it
Should have done the fried chicken without any extra spicing, just pure plain flour.
love u tooo

That reverse seared chicken looked absolutely awesome. I love fried chicken and I dont hate you for choosing it, but I see it as an occasional thing. I could eat that seared one for every meal for weeks and be happy while I would probably get sick of how rich fried chicken is quite fast.
Same here.

I like these videos where you cook a food in a bunch of different ways to find the best one so please keep making more of them ❤
Every pasta dish would be cool
Indeed these thorough contest vids are insanely entertaining and the final result is so creative
I thoroughly enjoy them, but man that's a load of work for Josh. ?? He's not complaining, though. So, we do need more...
I agree, I love this concept! worst case I can see one that is yummy and start taking elements from others.
yea, fr
Been loving this series so far, would love to see you do one with different cuts/methods of beef (ex steak au poivre with picanha or Birria made from ribeye)
This was so good, and so helpful - so many methods I have never tried, but now can see how simple they would be for me.
That dude on the left probably eats cardboard for dinner with a glass of water for dessert
Yo this shit had me crying
This is such a great video overall, but to be honest we need to hear more in regards to the judges’ reasoning behind their scores because they are all over the place
Yeah, on the 10/10/8 Vote for the reverse sear I'd have loved to hear what stooped it from sweeping 30
Actually, I was able to read their palates
@@waninigichuki1732 Bully for you, but I have no Idea what half these recipes taste like, if not more.
I'm still mad about the burger one.
And maybe some people who actually know a thing or 2 about the food? Like the first guy gave SOUS VIDE chicken a f***ing 6, but then rated a freaking broiled one a 10. How??
Schnitzel + lemon has been one of my favorite combinations since I tasted it, citrus just works so well to cut through the breadding + salty flavours. I'll have to try that piccatta looks great
Love your channel ! So much perspective, fun and knowledge ! hello from San Francisco!
I’m sorry but I think the judge on the left needs his tastebuds checked. No way he gave broiled a 10/10 😂
right???? his scores are so off and skewing the results we need a re-test
I think that he might be skewing the results because of texture reasons.
i was about to comment that lol.
@BryanOP so there's people who like things by taste and there's people who like food by texture. My wife is a texture person. I'm a taste person, I've made amazing meals my friends loved and she hated. So having 2 judges for taste and 1 for texture is actually a really solid panel to get a well rounded feel of the food.
Joshua: "I made the worst chicken possible."
Teal shirt guy: "This is an easy 10/10."
I am digging this series. I love the creation that comes out at the end. Kinda like when I take a poop the day after making one of papa’s recipes. Absolute perfection
I have been watching you for YEARS and this is by far my absolute favorite series
How on EARTH is Chicken Parm not in the “Legends” category!?
this is a fire comment
Proud of joshua for finally making an air fryer recipe correctly
Air frying is pure crap.
@@rmck6830 why?
@@rmck6830 It's a method of heat similar to a toaster oven. If your food turns out like crap, that's the cooks fault not the heating appliance.
@@rmck6830That’s basically like saying that convection ovens are pure crap. It’s silly.
I have a countertop air fryer/convection oven and that thing is fuckjng great.

As someone who never buys chicken breasts, I'm interested to try that out.
reverse sear is goated, specially for meal preps imo, its flavorful and doesn't dry out as much when refrigerated
I wonder, what do you eat? Thighs, beef, pork? I feel like everyone eats chicken breast at some point, cheap and quick meal 😅
Buy the unfrozen stuff from your grocery store. Its always better than those bags of frozen chicken breast.
@@Michael-ex8lk I always buy fresh meat, never frozen. If I dont end up using it in 2 days then I freeze it. Didnt even think about buying frozen products :o

I really like this series, would love to see more😁
As someone who was also disappointed that the butter chicken fell behind the picatta, could you also do a butter fried chicken recipe?
I was really wanting to see this happen
this video format is fire I love it
Still, I will miss this beautiful kitchen. *Onward and upward to bigger and better things Joshua Weissman. Blessed Be!
Reverse sear should have won over fried chicken. It would have also worked perfectly with a traditional chicken piccata recipe. But since you chose the fried chicken, you have to change the piccata recipe, making it a different sauce than you had judged.
I really like this series, would love to see more. Love this series! You should do pasta dishes next!.
What a great concept to create delicious food! Fried chicken piccata! Crazy good!
I absolutely love your videos and so I preordered a signed copy of your book. :) Keep up the great work!
I was a little surprised that Joshua didn't do Showtime Rotisserie and BBQ Chicken. Right after he did the George Forman Grill. Given how both were the best infomercials evenr
Yeah, we could’ve used some good old “set it and forget it!” 😂
I think you should do these taste tests blindfolded. I believe that your judges may have a bias towards bland looking chicken even tho it can be very tasty. I think that's why the scores are all over the place.
Or the guy on the left is just plain terrible at judging
@@Anmk-be9tfthat guy wasn’t in the fried chicken video though and the scores were all over the place in that one too
One of my favorite ways to cook boneless skinless chicken breast is poached in butter. It does not look good at all, but it is really moist and perfect.
Need more of these types of videos!
Salivating over that last dish!
Love this series! You should do pasta dishes next!
More of this series please! Very cool vid.
I *ALWAYS* skip through videos, but I watch this whole and it was amazing, good job and keep going, Joshua! 🐥
I think turning it to fried chicken kind of ruined this. In fact, you, yourself talked about what would be the best fried chicken sauce. I personally think the reverse sear method would have been a better representation of a "best" method to cook a chicken breast. It seems more useful, versatile, and better than just making fried chicken. Besides that, loved the episode and it inspired me to try the reverse sear myself, later.
I agree - in fact, my takeaway from this is going to be trying the reverse sear with Piccata sauce. That might be great!
Tried the reverse sear. Didn't brine but still came out good.
@@terrybradford3727 Part of what makes brined chicken breast so good is it makes it a little more forgiving. "Perfectly" cooked chicken breast won't have too much of a difference whether brined or not, at least in my experience.
@Skenjin I am a brine fan. First learned about how wonderful and versatile it is from AB back in the day, watching Good Eats. I wanted to see how the technique worked without the safety net of the brine.
It’s hard to beat fried chicken as a chicken dish. You can try anything you want but chicken is made to be fried
Did noone notice how the Tagine got 21 Points after getting 8,4 and 7?
10000 out of 10 video. I’ve been search for chicken breast recipes and this is a home run!
congratulations on the success and the new studio Josh, you've earned it
I love how long the Foreman/Airfryer stayed in the top 3 of methods. Those two beat out so many methods that you would think would be considered far better. Nope, the cheap countertop appliances used in college dorms across the country can make good chicken breasts.
That just showed how scuffed the judges ratings were. Might as well have gone to a random number generator.
@@michaelhoogendoorn3179
what are you talking about??
Unless I'm specifically cooking on the charcoal grill, I always cook my burgers, steaks, and chicken breast on a george foreman. Chefs may look down on it, but I am always happy with the way they turn out, and it's so much easier to clean than a pan.
I have to respect Joshua's commitment to being honest about tie breakers. Because I think the last thing anyone wanted to see was another Fried Chicken recipe after the last Every Way to Cook video lol I think he also realizes these types of videos have a long shelf life and shouldn't be influenced or changed based on what other videos came out recently or may be coming out soon.
Interesting and informative. Thanks!
This is an awesome video! Learnt so much from it!!
That final recipe would be great on a sandwich with toasty ( possibly garlicky) bread, some crispy fresh veggies and creamy cheese. Sounds like something Salt Hank would make.
Josh, I’m surprised you haven’t done a video focusing on Salsa yet. There’s so much potential there: fresh salsa, pico, restaurant style salsa, sweet salsa with mango, spiciest salsa. Make the video!
Congrats dude. You put in work. You deserve recognition.
I loved the part when he told us the recipe for the Super Chicken at 19:17, im gonna make some right now!
Josh, I hope you read this, your recipes are always golden (so far) but your adherence to the scientific method is what throws this content! (Still a great video, I just mean in regards to the rankings). You can’t control the human variable, your leftmost ranker was all over. But the REASON some things were perplexing is because you ARE adding confounding variables. Reverse sear beat out sous vide because you did it skin on. That’s a confounding variable. Fried chicken with skin on would have ranked better etc. anyway much love, keep it up brotha. Some of your recipes are my go-tos (like Tom yum )
Yes! Some even included sauces for some reason despite the whole intent of the experiment being to serve it with only basic seasoning and then decide things like sauces later. The breading on the fried chicken should also be considered a confounding factor and should have inherently disqualified it from consideration. Not to mention it just being in poor spirit since he already did a whole episode of just fried chicken. Is that 'best method' of fried chicken not best anymore? Which is the real 'best breast'?
These "30 ways" dishes are fun and funny! Plus the food looks wonderful. The tasters are so funny, combined with Josh's biased comments, it works. Blessings from the throne room all around.
I’m surprised that final combination turned out as good as it did. I didn’t think fried chicken, and piccata would mix but you proved me wrong once again! :)
Love this series! You should do pasta dishes next!. Proud of joshua for finally making an air fryer recipe correctly.
That first judge was all over the place

maybe start a youtube channel about cooking. or invest in restaurant stocks you know. It's a whole world of possibilities out there
funny that you mentioned stocks. My portfolio is looking like a crack den right now. Doing that never really cut it for me. I'm terrible at it
I wouldn't be giving stock advice in a video like this but then I would say you do not make the mistake of doing things by yourself. My stock portfolio is a managed one and I do not try to dabble in unfamiliar territories. My portfolio has grown by over 300k even in the present economy

Oh my partner is gonna be so happy about this, thank you!!
chicken Piccata looks so delicious, looking at it makes me so excited that I need to make it
That wombo combo at #30 looks amazing!
Those chicken breasts looked great, i do feel like dry brine should have been included in the first test though, its my favorite way to season chicken and even bon appetit did a test back a few years ago and thought it was the best way too
Tajine/tagine is normally cooked on charcoal or wood fire, a grill is also good. It’s meant to have an almost char taste with a little smoke to it.
jeez these videos are golden. I didnt even know I wanted to know all this

Would love to see a fried chicken / butter chicken combo recipe attempted at some point!
Excellent
Hi love the cooking videos
Great tips and tricks!
PAPA
I am thoroughly scarred by dry chicken breast so im a fierce advocate for dark meat chicken. Love the stuff. Maybe this video is a sign i should try to perfect my own white meat chicken breasts...
The real secret to good chicken breast that isn't dry is to use a meat thermometer to make sure it doesn't get over-cooked. Don't rely on cook times and oven temps given in a recipe since every oven and cut of meat is going to be slightly different. The only reliable way to know how well-done your meat is is to check the internal temp. Cook it to 165* and then remove it from heat immediately. If you don't want to be fussy with the thermometer then just stick with dark meat. Dark meat is more forgiving and can handle getting cooked to a higher temp - it even benefit from it.
I love Tuscan chicken and chicken picatta! So good

@@Rebe-Caufman didnt say it was, just that i want to see more in the future :)
hey josh! a pro tip for the air fryer: to lessen/get rid of the "moist" taste on the chicken, you should toss it in for a few more minutes after its done cooking. how long really depends on your fryer :)
The fried chicken combo 🔥🔥🔥🔥🔥🔥
I LOVE LEMON CITRUS IN FRIED CHICKEN even since i tasted it in one of the korean chicken shops in our area! i think it's because i've loved sour foods my whole life, i mean my favorite has always been sinigang, whether it's pork, chicken, shrimp or milkfish, the kind makes my jaw hinges tingle in delight
I often use an instapot for chicken breast, if you just butterfly the breasts and toss it in there with broth (no searing necessary, idk why you did that), let it go for 9 minutes, let the pressure drop naturally and it is always super tender
Because chicken broth isn't enough to season a piece of chicken I don't care on how you cook it
@@nix10kodeey I mean obviously I season the chicken, I figured that was a given lol

I love this study, Josh! Hands-down, my favourite would be the fried chicken. Years ago, I developed a technique of adding minced onion to the flour coating. When fried, it adds that sweet, caramelised "onion rings" flavour. It's really good. I would encourage you to try it. Cheers!
That sounds AMAZING
Its funny how 3 years ago he was starting to do UA-cam and now he's at 8 mil subs🎉
Am I the only one confused about how an 8, 4, and 7 added up to 21 points for the Tagine Chicken?
I wasn't sure if the editor was doing the "21" meme in a very subtle way or if they just math badly haha
Must have used common core math.
I was definitely confused😂
Love bringing back the original testers to try the final combined dish!
Hi Joshua, I got your book for Christmas and me and my dad are going to make some chicken from it and also the deep fried chicken. This year I am going to ask for your new book. From Charlotte
For the final combination my man put butter mayo, basically a hollandaise, with capers on fried chicken and was shocked it was great. Who would've thunk
