    When I make chili I use less chili powder and more cumin. My chili is well loved my the residents at work. I cook in an nursing home.

      In India, it's red chilli powder, we call it lal mirch powder/mensin pudi

    Have never use Chili power, don't like it. Would rather use Cayenne or just hot peppers, more flavor.

    Reading the ingredient list helps a lot too, lol.
    When I first start learning recipes from multiple countries (for stir fries, marinades/dry-rubs, dipping sauces, etc), I quickly learn the differences in spices used. When I open a fresh container of spice, I would give it a sniff and a taste to help me understand how it'll affect the dish.

    Cayenne pepper is WAY hotter. Chili powder is really not very spicy at all 🙂

    I had to learn this about cooking, it's a lot more of a pain in the butt to find stuff where people haven't tried to get "fancy" with the ingredients, so I started growing a lot of this stuff on my own. I just want to be able to add salt not have salt always present! JEEZ!

    When I am using whole dried chilies 🌶️ I use the Chile California. This one has the same flavor as the bottled chili powder you’re holding in the video. They are savory but not hot at all. I like to deseed them and use them to flavor boiled foods and sauces. My favorite is boiling them with my crab boil seasoning and then blending the liquid with the chilies then putting in my cracked crab 🦀. It’s my personal take on a Mexican dish called Congrejo Al Diablo. Which features hot chilies 🌶️ with crab.

    there is such a big difference in the 2 spices that it is a disservice to say that they are equal. if i replaced cayenne with chili powder in my pinto beans, it would be a disaster.

    That part about Chilipowder potentially containing other spices is true only if you live outside the EU.
    You cannot label and sell something as Chili Powder if it contains other ingredients. That's the way it should be and the only way that makes sense. Think about allergies and stuff.

    I think you may have just rescued my buldak sauce recipe. It tasted way too much like I overused the cumin powder in it, and I couldn’t figure out why. It’s the chilli powder! I’m gonna swap it out with Cayenne pepper the next time I make it, and see what happens!

      It's absolutely ridiculous. Chili powder is ancho chilies, they are not the same as cayenne. They have zero heat! It's actually lowkey offensive to those of us who have historically and culturally eaten ancho chilies.

    This is absolutely incorrect. Chili powder uses ancho chilies. Cayenne is a different pepper. There is no cayenne in those chili blends. It's really important to get your facts straight about people's cultural food.

    Pam, can I give you a little observation? When you say in your videos, *”Come with me. I’ll show you what to do!”* It looks a lot better if you say that phrase before you turn away from the camera. I’ve noticed the last few videos, you turn away from us before you finish saying that phrase. It’s your famous phrase, so turning away from the camera before you’ve finished saying it makes it seem as though you HAVEN’T said it. In every video, your audience is *WAITING* to hear you say it, so all the more important to have us see your face, if that makes any sense. Sorry, it’s still early in the morning. I can’t talk or wright correctly at this time! But you get what I mean. 😊
