    Excellent video!!! I love how you called Gordon out. I have learned to cook all of my ethnic foods from ethnic cooks and chefs. I believe part of an authentic meal is also learning about the ingredients (like this video), how to properly set the table, proper ettiquette when serving the meal, how to properly eat the meal, etc. I love Vietnamese food and have learned so much from your channel. Thank you.

    I truly enjoyed this. I love rice paper, and the fact that you got actual footage of a small kitchen that makes these from scratch... It made this video into an adventure and an education. In parting, I would love to suggest that you start a dedicated series of simple vegan Vietnamese recipes. (And don't be afraid to tell people, "in traditional recipe we would use fish sauce or shrimp on this dish!") - but the vegan Community has grown so much I think you would find a lot of love in the audience!

    I make edible flowers using rice paper and this video has been very informative! The flowers are beautifully translucent and I love working with it. I might try my hand at making the rice paper myself! I found a recipe.

    Thank you Helen for all of the hard work and great knowledge you put into this video to share.
    I'm especially grateful for the tip on just dipping the rice paper in water. I had given up on making spring rolls because they always feel apart. Now I know its because I was soaking the rice paper.

    great advice! I was nearly going to soak the rice paper longer after seeing a lot of other videos. I saw this one last of the lot, and luckily I havent used the sheets yet.

    I love this video so much! It is so nice to see how they make all these special Vietnamese foods -- so creative and labor-intensive! This video makes me want to go back to Vietnam to eat all these foods again. And thank you for showing how to properly use rice paper!!!! It makes me sad when I see people soak it in water for a long time lol soggy banh trang :(

    Helen. I absolutely love your video presentations! This was a very enlightening discourse about rice paper. I have seen where we should not call it "paper" but "rice wrapper". I'm happy to see you use the more common use of the word. At least here in the US. What I'm most interested in is that those hand made rice papers are nothing, and I mean, nothing like the commercial ones we have available here. Not a complaint, but an observation. I love spring rolls and make them frequently. Although maybe not with the traditioinal filllings. But when it comes to the real thing, I would like nothing better than to sit down and make those myself along with you and Madam. ( I hate to get people's names wrong so I won't try to spell it. ) A million thanks for this. I truly enjoyed the visit!

    THANK YOU SOOO MUCH!!! I love using rice paper and enjoyed watching how they are made and used. I do not soak my paper just wet a little letting it soften while I put on my ingredients glad to see you cover this part too. lol made me hungry for some fresh rolls so I a off to make me a dinner of them.

    Great video. Good to know I am right not to soak them in water for long. I mostly just have a light wet towel underneath and smear some water on top with my hands.

    wished i could try all of those types of rice papers.....thanks so much for how long [short] to re-hydrate the wrapper! i have some in the cupboard and am ready to experiment now.

    Thanks, for affirming that you don't soak the rice papers. I discovered on my own, not, to soak my rice papers. There was a lot of frustration until I discovered that.
    A video of the different dipping sauces and which ones are served with what would be so nice.

    Loved this i recently tried it and loved it enough to replace bread. I want to learn as much as i can. I thought it hilarious to call out Ramsey as the packaging instruct dipping for only 5 SECONDS on every brand I've looked at. 5 seconds was plenty pliable. Anyway, great video thank you for making it

    We take the rice paper and dampen it slightly and place and lightly press it on to sheets of seaweed. Then deep fry it for a few seconds. Then shake a little sea salt on them when fresh from the oil. Makes a nice salty snack.

Can I use rice paper for spring and egg rolls? What brand would you recommend if so... Little confused about which dough can be deep fryed.

    I felt really bad after eating some tapioca ricepaper rolls. I was really scared I didn't heat them up enough, but as I see they get heated before sold, so it might have been for another reason. Didn't know it is so much work. Thank you for this video!

    Thank you for this video. I have made some fresh spring rolls today for the first time. The texture of the rice paper was a little unusual to me, but once I started eating I could see why these are so popular. Easy to use, easy to eat and extremely versatile. I did not have many ingredients for this attempt so I used a very English mix of carrot, courgette and white onion with a sprinkle of sesame seeds and some mayo. Next time will be more interesting! :D

    Hi Helen! Thank you for sharing with us such interesting information about rice paper. On top of that I would like know more about the "optimal" use of rice paper. I already learned: do not sop for 30 sec. But how about the storage of summer rolls? sometimes I have the problem that the rice paper split. Do you have a tip how to reduce this problem?
