- Whenever you want to impress your friends or family I suggest making a macaron cake which is nothing else but a giant chocolate macaron. Fill it with your favorite frosting and enjoy!

Makes about 8 servings
Chocolate Macaron - Italian Meringue
1 1/2 cup (150g) ground almonds
1 1/4 cup (150g) powdered sugar
3 tbsp (25g) unsweetened cocoa powder
55g egg whites (from about about 2 small eggs)
1/4 tsp (1g) salt
55g egg whites (from about about 2 small eggs)
3/4 cup (150g) granulated sugar
2 1/2 tbsp (38ml) water
Raspberry Filling
4 oz (120g) fresh or frozen raspberries
1/4 cup (50g) sugar
1 tbsp (15ml) lemon juice
Sweetened Condensed Milk Buttercream
7 oz (200g) unsalted butter, at room temperature
9 oz (260g) sweetened condensed milk
1 tsp (5g) vanilla extract
For Decoration
Remaining buttercream
Fresh raspberries

Macarons are my favorite patisserie in the world, I lived in Paris for a couple of year and just like everybody else I joined the debate about whether Pierre Herme or Laduree had the best macarons.. all I can say is that I like both Laduree is a liytle on the traditional side Pierre Herme takes more risks ... but I love both 😍 thanks for this beautiful recipe

Hi!! Thanks for another beautiful tutorial on how to make a masterpiece! I noticed that you didn’t need to let the macarons rest for a period after tapping them on the counter... do you not have to let them rest when it comes to baking macaron cakes?
My daughter really wants one for her birthday but I know it would be extremely expensive. I wonder if I could pull it off. Lots of work but looks doable. Would I be able to double the ingredients to double the size? Or would it not work?

yes.. you can leave the cocoa powder out.. and add some vanilla bean for instance..
