千层酥皮用不完,可以放冰箱冷冻,需要用的时候取出来室温化冻就可以用了

您好,請問麵團烘烤時出油,是哪個步驟沒做好?做好的麵團需要冷凍之後隔天再使用嗎?謝謝
烘烤出油是正常的,不用担心
不用,冷冻或者冷藏,要看气温,不能冷冻太久,再仔细看看视频我有解说哦

I tried making this puff pastry before, I took the dough out from the fridge (overnight) and rolled, it cracks and when I put butter into the dough to roll, the butter starts flowing out. Could it be because of weather too hot? Even when i did it directly under the aircon, same thing happened.
I would say first roll was cracking as dough still to cold. Butter flowing means not cold enough. Use butter and not margarine.

老师,如果面料量增加2倍以上,都是冷凍15分钟吗?
不是这样算,主要是看面团,降温变凉即可,不用冻硬了会不容易擀开

好漂亮的千层酥皮。就是200g面粉只能做4个,太少不够吃😜
一次做雙份,吃不完可以冷凍,再吃的時候复烤一下像刚做的一样
