Beets are awesome, if you boil again definitely save the “broth” to use in soups. We usually only boil beets if we’re making borscht (beet soup) but we’ll save the broth otherwise for regular vegetable soup too if we aren’t making the borscht. Pretty mild flavor and very healthy (:

You should try steamed/boiled beers with olive oil, vinegar and minced garlic as a salad. We eat them like that in Greece especially with fish like cod. It's delicious!!!

i like beats a lot, i slice them into fairly small pieces and cover them in olive oil, then put them in the air frier at medium heat if they're soft before they're crispy i turn up the heat at the end, then add salt and pepper when they're done better than sweet potato fries in my opinion

My mom accidentally warmed up a jar of her pickled beets for dinner instead of regular beets. I decided to try them. I don’t usually like beets pickled or canned at all but for some reason the warm pickled beets tasted good to me. Reminded me of a pickled radish. Idk why I liked it but I would only eat one tiny one. It wasn’t like I wanted a bowl full. Just a bit was nice to have with such a rich dinner with potatoes and gravy.

In india there's plenty of beetroot so naturally I've had it a lot. You can make a beetroot raita by grating raw peeled beetroot and adding yogurt, chat masala and a little salt and sugar to it. Tastes amazing
recommendation from someone who prepped them wayyy too much in a restaurant; do it as they are still warm so it dowsn't cool too much. once they are cold it gets way harder to peel tthem... you can se a rag if it's too hot ;)
Roast them with some olive oil salt and a little bit of Rosemary and they just become these sweet little nuggets. I usually Cube them up when I roast them. You want them to get a little crispy on the outside and that will also caramelize them a bit
Roast beets with butter and a fat splash of balsamic vinegar. Also add a little garlic a little bit of sugar and a pinch of salt. Eat them cold the next day. The balsamic vinegar makes them taste like cherry Kool-Aid or something similar. It's awesome

In Poland we make soup with this stems and leaves. It's called botwinka.
Roasted adds so much depth of flavor. I also love to pickle them and add eggs to the beets and brine. They turn such a beautiful deep color.
Roasting is good. They taste like nature's candy lol. I use olive oil salt pepper and garlic.
