  • For an impressive side dish, watch how Martha makes potato salad. She steams rather than boils the potatoes, and she uses buttermilk to thin the mayo for one of her favorite side dishes. Finish the salad with a garnish of parsley and sliced hard-boiled eggs.

    Tip an elder woman gave me. If you put a handful of marbles in the water under the steamer basket, they rattle when cooking. If they stop rattling, it means you ran out of water. It saves burning or damaging a good pan.

    Use an instant pot to cook potatoes and eggs at same time. 5 minutes cooking time. 5 minutes natural release. Then quick release. Eggs go in ice water bath. Peel soooooo easy.

    I don't know about dumping the bowls back and forth.....just stir it! That's to many extra dirty dishes to wash! I also like the potato skins left on. I used to peel them years ago but prefer them the other way. Everyone has their own little touches in recipes. I don't like pickles in the salad but I do use pickle juice instead of vinegar.

      #Kay Goodness knows why she used those two bowls. Maybe her old aunt did it. Perhaps she couldn't see the silicone scraper/tool. Who knows ? I do wish she'd say. Actually I don't think Martha does enough explaining why she does certain things. Try more Martha.

    I don't understand why she doesn't mix the onions, vinegar, sugar and pickles in with the mayo and buttermilk then add it to the potatoes? The ingredients get more evenly distributed without breaking up the potatoes and you can tweek the seasoning easier. Processes and methods go a long way in improving one's cooking.

    • @ethelnewberry151
      @ethelnewberry151 Рік тому

      Shawn Kalcevic: Yeah...I thought about that too, & I agree 100%. Martha went overboard with more work than she needed to do, as in all those tiny little potatoes she had to peel.

    • @u235u235u235
      @u235u235u235 8 місяців тому

      i'll answer you. because the grated onion, sugar, vinegar, salt, pepper mixture is actually a brine for the potatoes to absorb. it's a NYC style deli potato salad recipe she's not giving credit to, which she's changing slightly. normally NYC delis will do the exact same thing but let the brine sit with the potatoes in the fridge for a few hours, then add the mayo later after most of the brine has been absorbed into the potatoes.

    • @wd122482
      @wd122482 8 місяців тому +1

      Ok, liquid brine ingredients are mixed together firs and even dry brines are combined first before applying it. So it makes sense to mix the onions, vinegar, sugar, salt and pepper together first, creating a homogeneous brine. Then every potato morsel
      is similarly flavored and the potato slices remain intact , avoiding mashed potato salad
      unless you like it that way.

  • @u235u235u235
    @u235u235u235 8 місяців тому

    the vinegar, sugar, salt, pepper brine type mixture first on the potatoes is a NYC deli style potato salad. good job steeling ideas and not giving credit.
