See the reason why most of these leaked recipes will never impact business is because their way to much work to make at home in small batches or simply too exspress to make in small amounts. Yes you can make orange chicken but it probably cost allot more for those ingredients than panda exspress and you'll never use those ingredients again also when you want fast food you want it fast
As a manager in food service most of these recipes are just copycat recipes, not the exact "recipes". Chain restaurants thrive on being consistent no matter where you are so it's extremely unlikely most items are made from scratch like he is doing. Sauces, breading, etc. likely are ordered premade offsite, even in fancier chain restaurants.
I worked at McDonald's as a teen & part of the training was telling us as much about each menu item as possible even if it was just simple fyi fun fact details. When I was being tought how to use the fryers (back before everything was automated) I was tought that the first part of the cooking process of the fries is a sugar bath then a par fry then flash freeze. The sugar bath is to keep the potatoes from oxidizing & to make them taste more savory. That's the signature flavor secret, make them a little sweet before frying & a double fry is required. I've been told training isn't like this anymore which is a shame.

Before I continue watching this video Raphael I wanted to say that you're probably the only food UA-camr that I watch that gives his all into the video and doesn't half ass or rush things because he has a million other things to do. As someone who has worked in the fast food industry i can tell you that most restaurants get their sauces ready made in a bag so pretty much no one on site has to make them
@@gigim.319 they mixed the base with the 2nd sauce for whatever sauce they need at Panda Express. But only the manager and the assistant manager are responsible for that.

So I have made the taco bell quesadilla with the "leaked recipe" & can confirm it tastes legit HOWEVER I'm like 99.99% sure taco bell employees are using pre-made sauce & would therefore not know exact ingredients or measurements for it. this is a "copycat" recipe & likely not the exact recipe for the authentic taco bell quesadilla sauce
I mean I agree with what you’re saying, but still, those pre-made sauces are indeed made by some employees weather it’s in the branch itself or in a factory.. meaning it’s still possible that it’s leaked.. but yeah who knows

Just to reassure you, at least in America, there's no such thing as it being illegal to share recipes. Recipes do not fall under copyright as they are considered to be 'formulas'.

Quantities of ingredients, however, are often kept secret by fast food places. So honestly yeah, he's got legitimate reason to be concerned about repercussions for potentially sharing food corps' copyrighted recipes without permission. I'm wondering if, instead of specifically naming each restaurant the copycat/leaked recipes are from, he just says something like, "This is a leaked recipe from a popular taco chain restaurant" or something.
Love this channel just found it, you're a very genuine person to spend time with and content I truly enjoy. - the nacho cheese sauce - the vinegar from the pickled peppers curdled the milk thus the thickening effect. Great video!
As a former McDonald's employee, I'm pretty sure the only thing we made from scratch was the round eggs...oh and some make biscuits(American style biscuits, not UK) in house, but not all of them. Everything else is made in a food processing facility prior to arriving at McDonald's frozen. The employees basically just finish cooking and assemble the food. I would definitely combine the nacho cheese stuff over heat. It will help to make it smooth and will likely darken it to a more similar color.

My sister used to work at Taco Bell and the one that blew my mind is that the Cinnamon twists are just deep fried noodles sprinkled with cinnamon sugar lol (like they put dry pasta in the deep fryer and they puff up and then sprinkle cinnamon sugar on them and bam, Cinnamon Twists). I don't think I really believed her until someone made a Tik Tok of it. She was like 'I told you'.
I used to work at a KFC/Taco bell and this is exactly how we make our quesadillas. We do have bigger tortillas and we do the half with 4 cuts rather then the whole tortilla something like that would be like the crunch wrap or something on those lines. I am shocked how similar it looks.

The ingredients for the McDonald's fries was the American recipe which is very different to the UK one, the UK doesn't use any of that... love this video, very interesting x
I feel like the reason the fries were too dark could have something to do with the temp of the fryer. Usually when fries or something is fried multiple times the temp is lower on the first round of frying then bumped up on the second round. That may be a part of the recipe they didn't share.

I LOVE these videos, partly because, as someone born and raised in the US, it's funny to see Rapha unfamiliar with products like Bisquik (which was/is for sure in almost every pantry in America) and Cheez Whiz (gross, but familiar to most everyone!) Also, Rapha-- you might be surprised to know that cocktail meatballs are often made with grape jelly! The basic sauce is grape jelly, chili sauce, and BBQ sauce. I made some vegan ones for a Christmas gathering a few years ago and they were SO yummy!
I'm American and have no idea what Bisquik is. 😂 Maybe it is my background, state, cultural influence or something but idk what that is. I think I heard the name before though, so you're right about that.
Bisquick is so versatile, but save your money and make the mix. Way cheaper! The homemade mix is really easy and makes a lot. Just google it. You're welcome! 🥰

How do you know it was a line worker who leaked the recipe and not a test kitchen employee?
Or easier if you want a taco Bell dupe, just buy the sauce at the store. The chipotle sauce is in bottles.

I LOVE these videos, partly because, as someone born and raised in the US, it's funny to see Rapha unfamiliar with products like Bisquik (which was/is for sure in almost every pantry in America) and Cheez Whiz (gross, but familiar to most everyone!) Also, Rapha-- you might be surprised to know that cocktail meatballs are often made with grape jelly! The basic sauce is grape jelly, chili sauce, and BBQ sauce. I made some vegan ones for a Christmas gathering a few years ago and they were SO yummy!
I'm American and have no idea what Bisquik is. 😂 Maybe it is my background, state, cultural influence or something but idk what that is. I think I heard the name before though, so you're right about that.

Bisquick is so versatile, but save your money and make the mix. Way cheaper! The homemade mix is really easy and makes a lot. Just google it. You're welcome! 🥰
