It’s coming your video made me laugh the whole time , I know how it all feels that you were going through , no body said it would be easy , when in doubt throttle out
Only thing I would consider is a fuel tank on one side vs the other. Could go with 2 smaller tanks and find a way to equalize both tanks to keep the rear ballast even side to side. Then front to rear weight wouldn't be an issue whether you have 1 or 2 people in it.

Grease your parts and it will hold them still. Keep up the cheap projects, many of use have loads of stuff and looking for some fresh ideas
