You shouldnt mix zimmermann drilled discks with ceramic brake pads. Even Zimmerman says about that on their trainings. The braking power will be weaker, and there will be a problem with "friction film". Ceramic pads are okey, but only with standard discs.

What’s the torque specs for the front brakes more specifically the caliper bracket
The caliper bracket gets torqued down to 190NM.
As the other poster said. I live in Germany. Almost the entire country knows not to use Ceramic pads on those drilled Zimmermann discs.
