I love these bean and cheese burritos. I like to make a bunch ahead and wrap them in foil and freeze them for the week. Sometimes I add corn and rice or eggs and sausage for a little extra variety but these are great simply as they are!
One of my comfort foods is also super simple... smashed beans with a thin slice of queso fresco (ranchero) in a folded tortilla warmed up on a comal with the beans and cheese inside. I like the tortilla to be a little crunchy (not too much). When done I put a little bit of salsa and have it with a cup of coffee.

Yesss I loooooove onions in my burritos but my kids front so I have to skip on them 😅 but you can always make this recipe, allow it all to cool down then make ur burritos wrap them in parchment paper and foil then freeze and just like that you ready for the next time you want a burrito 😊
This looks amazing. But Just an FYI- it is important to soak your beans. This is not only done to soften them but it removes the oligosaccharides and lets your body absorb the protein, fiber, ect. If the oligosaccharides are present in the dry beans it is very difficult for your intestinel tract to digest the beans completely.( Think gas). If you overnight or fast soak, then rinse-it gets rid of almost all of the oligosaccharides allowing you to digest AND get all of the nutrients from the beans.

Every recipe of yours I have made has been extremely good, and the cookbook is on HEAVY rotation in our house since I have moved out of the southwest. Scratches every itch for recipes and foods I miss and cannot get further north! A good bean burrito is hard to find, and cant wait to try this!
When I was a kid I had two after school snacks. A bag of plain white sandwich bread and a bowl of heated up spaghetti sauce. I would sit in front of the tv doing homework, tearing off pieces of bread and dipping it into the sauce. If I was feeling fancy I would add season and heat it up in a sauce pan on the stove, and/or add cheese on top. The other snack was a bean and cheese burrito. open a can of refried beans, heat it up, take a tortilla, spread a few tablespoons of beans, top with cheese, roll up and wrap in tin foil, then bake for fifteen minutes. To fancy it up, make your own refried beans, or add seasoning, salsa garlic, onion, cilantro, etc. Serve them with a dollop of sour cream, cheese, salsa and a sprinkle of chopped cilantro. Yeah I was a little chef by the time I was in middle school.
I can't do refried beans on a burrito without some meat. We are lucky to have a very awesome Mexican restaurant only 10 minutes or so from the house. They make some world class and genuine "Americanized" Mexican cuisine. I love the 1/2 chicken and 1/2 seasoned ground beer burrito with everything. I'd rather have that than the best steak at Ruth's Chris or anywhere. Everything is so fresh and amazingly tasty. The staff are all from Mexico and some of the nicest and most welcoming people I've ever known. They make their own super spicy red and more tame green sauce every morning. (Habanero and Tomatillo, respectively) I mix it about 1/2 and 1/2 and dip my burrito in before each bite. It's heavenly. Their refried beans are perfect when served in this burrito. On their own, I'm not a huge fan. If Claudia says these and some cheese on a burrito work, I have to try one. Claudia is my go to for all foods with a Mexican base.
That does look so simple and so good. And I bought some dried chiles on a whim a while ago and haven’t been inspired to use them yet. Guess I found the recipe for me.
Looks so good! I have to keep practicing on tortillas last time I made them they were so sticky even after 5 minutes so I added flour and still kept getting sticky I was struggling lol

Definitely going to try the beans with the chiles. We love homemade tortillas and beans too. I make them weekly.
