Ingredients
Raw rice (maavu pacharisi) - 1 cup
Jaggery - ¾ cup
Water - ¼ cup
Cardamom powder - ¼ teaspoon
Dry ginger powder (sukku) - ¼ teaspoon

*the quality of adhirasam is more with homemade rice flour,because ground rice flour for adhirasam has a little dampness in it.
*if using store bought rice flour then try by roasting the flour till its warm and then use it sis

Usually rice varieties gets fermented ,it won't get spoiled sis.
The sourness of the dough by Fermentation is a criteria for soft Adhirasam. If we deep fry the adhirasam just after the dough is prepared, then the adhirasam will be crispier and not soft. So Fermentation is must ...
