    This is the best explanation I’ve seen on ri consistency. I hate the “seconds”. This is way easier and kind of what I do at this point too.

    I've been making decorated iced cookies for years now and have watched probably 100s of videos from the various cookie masters. But I LOVED the way you did yours! Straight to the point, chock full of great tips, and you demonstrated beautifully what the various consistencies actually look like without relying on the seconds. I still do count sometimes but I do have to be very careful I use a stopwatch or keep a steady pace. :-)

    Thank you for showing that you can outline and flood with the same bag to save time!! I'm definitely going to try your technique over most everyone else who uses two bags! I've only minimally decorated before, but I have a project in mind and need to learn outline and flooding and then adding additional layers on top. Tank you again!!! Any tips for a new decorator???

      My flood icing ended up being sightly too thin, so it kinda spread out to much, so they look kind of "off" but not bad for only my 2nd attempt ever using royal icing. I just need to get better at judging the consistency. And your tutorial was really helpful! Even tho my cookies don't look as good as I'd hoped, they're way better than my first try! 🙂

      @@sandyd753 I have been there! Next time you notice it spreading just empty your icing bag in a bowl and add powdered sugar. I know reworking the icing adding sugar or water is a pain but sometimes the icing just acts different on the cookie.

      Hey! So you want the writing consistency to almost be like outline but the difference is with outline it’s ok if it’s a little stiff…just with writing you don’t want it to be so stiff that it causes peaks. I would test it out before you try it on a cookie! I hope this helps!

    You said something SO interesting I hadn't heard before and I want to learn more. I also use white icing gel to further color my natural white royal icing into that pristine white for snowflakes, eyes, etc. But you mentioned it also prevents colors running... which is the fascinating part. Can you elaborate more? Does that mean when I use it, it protects the white from getting tainted with neighboring colors? So curious about this great tip. Thanks!

      So I use white because it’s supposed to help stop 2 different colors that’s next to each other from running over onto each other. This is for any color I add a little white. When I first started doing cookies I found this knowledge and tried it and it worked! At least with americolors it does. So it doesn’t hurt to add a little white to all my colors just incase it does make a difference! Thanks so much for watching!

    I appreciate how you paused to show what the icing was doing when you moved the spatula around so it was clear what we need to look for. I’m going to try this for the first time today (just for fun) so thank you. Question: if you want to add details on top of a hardened iced cookie, can you use outline/flood consistency?

      You’re welcome! It depends on the details you want to add. If you want to draw the outline of a flower I would use outline icing… but if you want that flower filled in you can use outline/flood. I hope this makes sense for you! 🙂

      Thanks! This happens to me too sometimes, it could be a few reasons… maybe your icing is not thick enough so just add a little powdered sugar. Another reason you could be flooding the cookie with too much icing. So try using a little less flood and move the icing around with a scribe. Or if you outline your cookie then flood use less icing while flooding around the edge and use the scribe to move the icing to the edge.

    I STRUGGLE with icing consistency sooooo much!!!

    Does your icing ever start out great and seem to get thinnner on its own? I know that sounds crazy...I know heat from my hand can make it thinner in the bag but maybe my cloth is too damp that I put on top? I’ve made RI cookies many times, sometimes it’s great, other times...🙄

      Thank you for subscribing! So yes this has happened to me. 🤦🏾‍♀️ Sometimes I think maybe my consistency wasn’t what I thought it was so then I have to remix it and make it thicker. Or could it be that your bags have set for a while and the icing began to separate? I’m sorry this happens! But you aren’t alone, it is a struggle. Just cut that icing bag and remix lol let me know if there is anything else I can help you with!

      I would use a buttercream icing. Not much needed. Checkout this video if it doesn’t need to be vegan use 2 cups of regular butter and eliminate the vegetable shortening. You can cut recipe in half too!

    When you added the bright white gel your icing looks exact same color as when you started out.
    it needed to be bright white so a few more drops would be needed. And it is a lot easier to fill those piping bags if you put them in a jar first

      Thanks for watching! Right it didn’t change to bright white because I was coloring this icing pink so my goal wasn’t to change the icing white. I add a little white to all my icing to help prevent bleed. If I was trying to really color it bright white I would have added more. And thanks, I used to put them in a jar but I just fill them by hand now!

      @@ramona3010 for example if you pipe like a red icing next to a black icing. The black icing might bleed over to the red icing after it dries. So on top of your red icing u have a line of black.

    For How long we can Store royel icing cookies..and how to store cookies after royal icing ,how much time royal icing take to dry..? Pls answer all ?

      Hey! You can store them in an airtight container or bag them and they are good for 3 weeks outside the refrigerator. If you need them longer you can freeze them and i date them for 6 months in the freezer- that’s with and without icing. I never froze decorates cookies that I was making for someone because I had a bad experience.I freeze plain cookies all the time by putting them in a freezer ziplock bag with parchment paper I’m between them. After icing cookies let the icing dry for 24 hours and you should be good to store.

      @@itsjennwbrown - I've had very good luck freezing decorated cookies in advance of big parties with some tips I learned over the years from other talented folks like yourself :-) . Here's what I do:
      1) Make sure all layers of your royal iced cookies are completely dry
      2) You have to double seal the cookies when freezing to make sure they stay completely fresh, so that means using either double Ziploc /Glad freezer bags or my preferred way of putting the cookies in a gallon ziplock freezer bag and then putting that bag inside a Ziploc large sealed plastic storage container. Those stack so nicely in the freezer and the cookies are completely safe from damage.
      3) To maximize storage you can stack the cookies on top of each other but you must put either parchment or wax paper between the layers. I try to go no more than 2-3 layers deep but I've gone 4 layers before without any cookie designs being crushed upon thaw
      4) The thawing process is important - this can mess things up because as we know if royal icing gets moisture in it, the color runs. You MUST thaw the cookies INSIDE the SEALED Ziploc bags until you're ready to take them out. I give it a day. Then when they are completely thawed I can open the Ziploc and pull them out with the original detailed designs still perfect. If you try to thaw the cookies outside the bag the condensation as they warm up to room temp will get ya.

      I don’t use the first consistency to write with because if I’m making an outline icing, I don’t put much effort into making sure it won’t move at all because I’m covering it up with flood icing anyway. When i know I need to write I make sure the icing won’t move at all. I hope that’s not confusing. So if you want to outline and write with the same icing make sure your icing is stiff enough. I hope this helps!

    I’m still confused as to how you know you’ve arrived at the outline/flood consistency

      So your icing is going to be a little thick to create a border but it should still be able to flood your cookie. Check out around the 2:50-3:08 mark. I test out the icing to make sure it will still flood and not cause peaks. And if it’s too thick I add a little water. It’s all trial & error! I like to make a outline/flood so it’s less icing bags and the process of flooding is faster to me.

      @@itsjennwbrown But is there a “seconds” test like 20 seconds or no peak at all when you pick the spoon up? I didn’t really see anything I could actually put my finger on that would mark at what point this would be the correct consistency.

      When u lift up your spoon your icing will fold down slowly and after you move the bowl around the icing will flatten. I don’t use seconds anymore because I think I was counting too slow or fast at times! So far I had the best results just by looking at it. If I had to guess I would say probably between 12-15 seconds. As always test it out. If it’s too stiff add very little water give it stir and continue that until you can make a border that won’t move and flood. Because either your icing will be too stiff or too loose you want that sweet medium!

    What brand of confectionary sugar you use ? Walmart brand tasted like medicine

      I usally use domino confectionery sugar. I recently tried the Walmart brand and it was fine to me. But I understand that off brands can cause a different taste, So stick with what you prefer! Are you flavoring your icing and what kind of meringue powder? I feel like Wilton meringue powder gives my icing a weird taste so I use CK.
