That's a great question. It has pros and cons! The plush yarn is great on your hands to work. The bigger crochet hook and thicker yarn make it easier to crochet with. However, it is harder to work with in that it is a bit harder to see your stitches and depending on the plush yarn you choose, it sheds and breaks more easily.

It's surprising to me how different they look just by a slight change in color. The gnome and the chick are perfect examples.
Ita not just color. Since the first yarn they used is thinner, you can see the stitches easier. The plush yarn makes it more fluffy and less defined.
