- Well, the moment I've been waiting for has finally arrived! My very first cook on a Yoder Frontiersman Smoker. I wanted to make my first cook an epic one and this was the outcome. Hope you enjoy this MEGA MEAT FEST video!

Holy crud, that platter is packed with goodness! A six hour brisket is a good thing. Plus hey you got pickles on the platter! :) Stellar cook Joe!
LOL! I actually though about you when I prepped the platter. My fingers smelled like pickles. 😂
I had mine for 10 yrs and had problems with my briskets sometimes burning on the bottoms from the temp control plate getting so hot. What I did was use butcher paper underneath them and sometimes butcher paper on top of foil that way I could form the butcher paper around the edges of the flat to keep it from burning. Great looking meat coming off that cooker.

I gotta say That's the way to break in a Smoker! I liked a lot of what you were doing but not sure why you went with that rub with charcoal in it. It confuses that natural bark and crust color that you get from a wood cooker. I was glad to hear at the end of the video that you will be going fat cap down on your next brisket in this pit. When You put it on those screaming hot grates, and I could hear that sizzle, I knew right then that You would Not have a Smoke Ring on the meat side of that brisket.....and you didn't. You powered that delicate meat right through the point of developing a smoke ring.....that chemical reaction won't occur at higher temps.....so good call in the future. You commented on the nice ring both of the Ribs had......that's because they where in a cooler heat zone and had time to form that ring. You might also want to try spritzing at the beginning of cooks with cold water to cool the surface of the meat so it will form a smoke ring. Also vinegar in some tests was shown to hinder the formation of the smoke ring. As you saw you didn't have a smoke ring on the fat cap side.....smoke and those elements of burning wood that form a smoke ring can't penetrate the fat. I'm sure you may already know this stuff and Everybody has their own methods and techniques,...and that's all I'm pointing out. We can have friendly differences in methods, but in the end we have to eat the Que....Do what we like not what someone else likes. Wish You would have talked about and shown your fire management method for maintaining such high temps throughout this cook. Thumbs Up My Friend! 🔥👍
Thanks for the comment. The activated charcoal isn't charcoal like we use to cook with. Its usually coconut husk infused with spices. It's really good and it doesn't have any affect on the bark. Anytime you cook at those high temps, your not going to get a smoke ring. Many people think they need a smoke ring to have good tasting BBQ but that's not always the case. I wanted to cook that brisket hot & fast and I was able to accomplish that knowing I would sacrifice a smoke ring. 👍🏼Will I do a low and slow cook? Absolutely! The facts you stated are things I'm obviously aware of and I appreciate your comments. As far as the fire is concerned, I was adding a good size split of wood along with a smaller piece every hour. The bed of coals was hot and the minute I'd drop a split, it would catch. This was already a 30 minute video which is probably my longest ever. I did a fire Management video to help answer some of those questions. Thanks again for watching and commenting.

Hey Joe, now that a BBQ platter. I'm from Chicago and just started smoking spareribs and whole briskets last summer. I don't have an actual smoker but I tweaked my grill where there is no smoke leaking but trying to save up for a good smoker. I really enjoy your videos. Hopefully one day I'll stop by Texas and try out some true BBQ spots! Thanks for sharing!

I always do my brisket hot and fast within 6 hours. But mainly because I don’t want to wait doing it low and slow. I get impatient and want to eat. 😂😂

Looks fantastic. Did the brisket come out tender as it would doing low and slow? I'm intrested in learning the the hot and fast method as well. I would like to learn the comp trims and would like to get into the cookoffs in the future I'll be moving back full time back to el Paso hopefully by the end of the year or early spring. Where is the sausage company there in el paso?
Hey Omar! The brisket was really tender. This smoker needs to be a fat cap down smoker and Incooked it fat cap up. The flat wasn't as tender as I know I can get it. I can help you with the competition trims when you're back home if you'd like. The Sausage shop is off Dyer on Tompkins.👍🏼

Would you say it’s equivalent to a 500gal smoker? I’m interested in getting one for a catering business
Hello Joseph, close but the 500 is a little bigger. The 500 gallon is 7 inches wider and about 30 inches longer. Having upper and lower grates does give you more cooking space on the Yoder. 👍

Would you recommend a Jambo smoker? I live about 20 min away from them or any recommendation of any other manufactures in the DFW area. I've been doing BBQ for 13 years and i think its time to test the waters to compete.

I actually have several older pieces that I used for this cook. I tried warming up a few on the top of the firebox and 1 hour later, they were already catching on fire. 🤣 I'll try the storage box next. 👍🏼
