That’s a good question. I’m not sure and would just be guessing if I gave a number.
I am going to follow this method on a costco prime next week. For the overnight rest, did u leave the boat open or cover the top in foil? Need to try a fold-over sandwich!
Definitely give the fold-over a shot! I didn’t cover the brisket during the overnight rest. I left it tightly wrapped in the boat with the top exposed just like during the cook

@@ryanbramich6951 It was between $5-6lb. Another reason why I was looking for a prime that was smaller and unscalped. Prime was $2.99/lb when I got that brisket
