Good looking brisket it’s got the rite wiggle in it and cutting it at 1/4 inch slices aka pencil size slices shows it’s done rite and super moist a lot of people dry it out and cut it thin like paper to get away with some BS haha , I bet your neighbors are always hungry smelling all that BBQ .

Thank you for watching Airtaz. I like using foil for pulled pork and I also let it rest wrapped in foil. Pulled pork is a lot more forgiving than brisket.👍🏼
Brisket is king in Texas because of the post oak or mesquite. Nobody mentions this hardly but its the wood that is the flavor. All those goofy rubs on some videos arent necessary. Texas is so big even the area you get the wood is different. Central and west Texas are best choices for quality post oak and if you have good wood from here your good to go.
Hello Danny! Great question buddy. I don't recommend a cooler because you can overcook a brisket really easy. The temperature will continue to rise up to 10 degrees which would overcook the brisket and it might start to shread and dry up a bit. Lots of people use a cooler and there nothing wrong with that if you allow the brisket to come down in temp before you place is in a cooler.👍🏼 Thanks for watching.

Hello Gerardo! You want to place you fat cap towards the heat source. You mentioned a pellet smoker so If you're placing the brisket on the bottom rack, place the fat cap down towards the heat. You do this to protect the flat of the brisket. 🤘

What is your reasoning for not putting it in a cooler? How do you keep it warm for a couple hours after?

That was against the grain, if you’re not sure go back to when he was trimming and see the grain.
