    I've been to Tuscany but I'm sure we didn't have these so I must make them next week! That ricotta cheese trick is impressive and I can't wait to do it. You ladies are like favorite Aunts always cookin it up! ❤️

      They are called gnudi from the fact that they are basically the filling of ravioli without the pasta! Saw this dish originally on Lidia Bastianich.

    This is the second recipe I've tried to make spinach and ricotta gnudi, and it's so much better than the first one - a real winner. With the first recipe, the gnudi came out chewy and doughy. I served them over marinara sauce, per the instructions, and the sauce totally overpowered the taste of the gnudi. In this ATK recipe, the gnudi come out light and delicious, and the amazing tomato-butter sauce is the perfect complement. Also love the ricotta cheese trick.

      They never left, but had to do things separately due to Covid and obviously, this is I think the last season (2021) we are seeing now.

    I'm going to try these. I've been using ricotta to bind my meatballs together instead of egg and bread crumbs for a while now, never thought about spinach or a dish like this.

    I am definitely going to try this out, but will up the garlic because it's against my cooking rules to use less than 6 cloves, since garlic is life. 😂❤

    Can gnudi be made in advance and frozen until i want to serve them? Should they be frozen cooked or uncooked?

    Wonderful, I was expecting the addition of a grind of nutmeg to the spinach. Either way, gnudi are terrific.

    We made these and they were delicious!! There were so many that we tried to freeze some before cooking, which didn't work out at all... when we tried to boil the frozen gnudis, they turned to mush. I do wonder if they would have withstood freezing if we had cooked them first. We'll report back next time we make them :).

    I tried to make these in the 90s and they dissolved in the boiling water. fail! Glad to get a recipe with tips that might make it a success this time!

    Would anyone know of a good replacement for the flour?

    I am not a fan of spinach. What other green would work with this fantastic dish? Also, drain frozen anything in a colander over a bowl if what you're thawing has a desirable liquid and you can save your hands a little of work...

    Stop playing Julia, you'll have to have an extra superior sharp knife to cut those tomatoes like that. So what should you buy in order to do that trick? Lol

      It works! My knives aren't "extra superior sharp" and I've never had a problem using the two lid method. I first saw Martha Stewart do it, then Ina Garten. Give it a try.

    really....true ricotta is made of WHEY and not milk! i think this product is more like topfen/quark like in Austria, germany etc.

      I'm the same way. However, unbleached ("supposedly natural?") paper towels, napkins, kleenex, toilet paper, etc. can all be found online or in your local health food store. The manufacturers might even claim their products to be organic. Such items are expensive, so there's *that* tradeoff. Also, I would imagine one could use a super-clean 100% cotton kitchen towel.
