12yo Triple distilled Single Pot Still - Batch 2/19
pot still - malted and un-malted barley
Matured in Bourbon seasoned American Oak barrels and Oloroso Sherry seasoned Spanish oak butts
ABV 55.8%
Not Chill filtered and natural colour
COLOUR
Deep copper
NOSE
Citrus, dried fruit, raisins, light sherry, vanilla wood, barley, hint of alcohol
DROP IN THE PALM - light whiff of fresh hot raisin bread
TASTE
Very rich, creamy sweet and full bodied, butter biscuits, sherry, milk chocolate, fruit and vanilla, toasted oak, all spice
FINISH
Medium long, sweet tropical fruit, nuts, honey, butterscotch sauce, barley, toasted oak spices
EMPTY GLASS - dark sherried malt with freshly ground coffee beans
WITH WATER:
Nose: more butterscotch sauce over and rich dried fruit
Taste: creamy apricot dessert with sherry drizzle
COMMENT: triple distillation gives it a clean fresh sherry flavor compared to double distillation sherry cask whisky
