Just made this. I added garlic and used 1/2 teaspoon of instant ramen flavouring instead of chicken powder (didn't have any and as Aaron says "don't worry bout it.") Would make again.!

The stir-fried potatoes look suspiciously like the Peruvian dish of lomo saltado without the meat. Imagine the sort of ranges one can work with Korean flavors & Peruvian dish forms (like salchipapa, causa, huancaína, kamjajeon with cheese, potato tamales from Guatemalan kinds, & more) & even more doable stuff from the freeze-dried tubers known as chuño (which is also more nute dense than fresh potatoes). The stir-fried potatoes are just the start of what can be made

you can add vinegar to your water before adding potatoes so they keep their structure even if you cook them for a full hour. there's a chinese dish that does this as well.
they become soft once you stir fry them.

I tried it for dinner and it was really good, quick and easy! Swapped chicken powder for half a chicken stock cube and it worked great!
Blanching the potato is really a neat way to shorten the cooking time.

Yes, we usually eat it with rice and other dishes. But since it’s very mild, not too salty, you can enjoy it without the rice if you want to. :)
Instead of using oil and adding bacon, could we use bacon grease to sauté the veggies? My family strains and keeps bacon grease after cooking it. I bet that would be delicious too!
