After getting our salted bacon into the smoker, we are salt curing all the rest of our pork bacon, loins, and coppa/cappicolas for future eating.

Oh Ben.....my Dad is in a care home. 85, fighting dementia, kidney cancer, heart disease, a broken shoulder. I can't be there for him due to my own health issues. When you held up the meat hangers and called them MEATHOOKS! When my brother and I were little, we had zero table manners. After we ate, Dad would haul us to the bathroom to " wash your meathooks " . We weren't allowed to touch anything. He held our wrists up and marched us down the hall, to the sink. Our meathooks would be thoroughly washed.
Dad, a Navy man, eventually forced table manners on us. Sometimes I use them! 😊

A charcuterie board is basically an adult lunchable where you swap the capri sun for wine.
When I was kid we raised pigs and Mom and Dad always sugar cured the hams. They hung them to cure in old pillow cases in a cider block building Daddy called his “shop”. It was cool and dry. One day a school friend of mine came over to my house after school and Mom had one of those hams, still in the pillow case, laying on the kitchen table. My friend asked Mom what was in the sack and she said “Oh, that’s just Fred, we’re going to have him for Sunday dinner!” My friend’s eyes got wide and he never came back to visit! I guess he thought “Fred” was a person, when it was the name of the pig! 🐖 My Mom loved messing with my friends like that… it was hilarious.

I hope you are keeping journals of your recipes and meat procedures that you are doing. So many adults are wishing that they had their mother’s and grandmother’s recipes. They remember seeing their ancestors doing it but never learned to cook them. Another fantastic video, Thank you 💜

I LOVE using a smoker tube!! I got a couple of them last summer and they are awesome! I bought 2 so when I want heavy smoke, I use both.

Maybe a crazy idea , but I think if you would make an excel spreadsheet and place your recepies in them with the percentages you just need to put the weight of the meat in and you get the amount of salt and spices in under a second . Awesome the only thing we cured was ham and bacon and that was like 40 years ago never thought of curing any other pork products so this was interesting even though we don't do pork now only do beef seeing there's only the two of us now.

Hello to you all. I so with i have your kind of life. I miss gardening & canning food back in my younger days. The sad part is I nave no where I could garden no more. SO that is why I watch your & the Justin Rhodes & Gold Shaw farms, & The Fit Farmer, & Simple Living Alaska. I can live the kind of life I longed for in watching all of the videos all of you post. That is so great that Andy and Doug told you about the smoke tube. Are these the same pellets you can use to heat your home with a wood stove? They are usually hard wood pellets. We used to buy them for about $5 a 40 lb bag. Yum, braunschweiger lunch! Meg's sourdough looks so good! Gourmet hot dog! Thanks for explaining about the equilibrium method to cure your meats. So weigh out the salt at 2,25% of the weight of the meat you want to cure. Thanks for explaining this. I've heard you put sugar on hams too? So you add spices too.I love the time lapse of you curing your meats with the kids wandering in at times. Wow, they can stay that way in the refrigerator for months and be fine! Good to know! That tube is how I cold smoke chunks of cheese and it is fantastic 😋. I love brauynsweiger and onion sandwiches.

Have been watching a few of your California videos, how far between … like 2 very different families really. 4 LITTLE boys ❤, growing food your space allowed, chickens and hens for your eggs THEN , SO much space that’s absolutely beautiful, a fast growing baby that is gorgeous, 4 handsome young men, … and Buggy ♥️ that little girl is just amazing. Like a flower in a huge field but hand picked by Jesus himself. I love how just down to earth you live, Meg, you are THE BEST COOK! You don’t go through telling us about a recipe and talk to us like we’ve never cooked before. 😄 There’s a few that watch too many cooking shows 😂😂. And you show all you’re doing too except the cinnamon buns 🥴 😄. I have a fav recipe for mine but yours… I dunno… I just want to make that one. Love to all. Work on the addition is on a winter slumber I presume - it’ll be so nice to have the extra room I bet.

You can get bigger smoke tubes to produce more smoke and for longer smoking times. We use them for smoking cheese. We got ours in Amazon, it smokes for up to 12 hours.

I use my smoke tube to make smoked cheese. I have a pit boss also and I used it as my chamber. I don't even plug it in. I just have to make sure the temp outside is 45 degrees or below or the cheese will melt. Makes wonderful cheese. Try smoked mozzarella on your pizza.

Hi guys, my husband uses those tubes to cold smoke blocks of cheese. It turns out so good. He made his tubes himself.

Good choice for smoke. I have been using a pellet tube for 3 years. Just yesterday i smoked cheese sticks and a spicey peperoni stick of meat. Outdoor temp was 30 degrees smoker temp held at 44 degrees for 6 hours. all came out great

Have you ever tried growing sawtooth corriander otherwise known as cullantro. ? Not as tender but great cilantro flavour and it doesn’t Mind a hot humid summer. When it shoots out flower stem. Just snip it off. Or let it make like 1000000 seeds for more plants. It can grow in full sun or shade. Grown in the shade it produces more tender leaves
