Really bad idea to change the date when the watch could have been between 9pm and 3 am, always make sure the watch is not before going through the dates
That's not true. It's a quick-set date which means the date change gear/mechanism isn't engaged when changing date at any time. This would be problematic on an ETA movement but none of the modern day Rolexes.
