French Onion Style Meatloaf

  • Meatloaf flavored with deeply caramelized onions, thyme, Worcestershire sauce, Lipton's onion soup mix. Topped with lots of cheese and more caramelized onions.
    Melt two tablespoons of butter over medium high heat.
    Add one large rough diced onion, sprinkle with a bit of salt. Toss well in the butter and allow to sauté until unions are tender and begin browning.
    Toss and turn regularly.
    Continue to cook and reduce heat throughout until onions are deeply browned.
    Add Two cloves minced garlic to the skillet
    Add 1 1/2 Tsp dried Thyme
    Add couple tablespoons of Brandy. Allow Brandy to cook off a few minutes.
    Turn heat off on skillet.
    Add a tablespoon of Worcestershire sauce and 1/2 cup unsalted beef broth.
    Add One pack of onion soup mix and 1/2 tsp black pepper....... stir well then set aside.
    Mix the following gently - do not overwork.
    Two pounds 80/20 ground beef
    1/4 - 1/3 cup grated Parmesan cheese
    Two eggs beat up
    2/3 cup breadcrumbs
    The set aside French onion soup mix from the skillet.
    About one teaspoon of salt.
    Once combined, form into a rectangle about 1 1/2 to 2 inches thick.
    Sprinkle the top with some garlic powder or a garlic blend of choice if desired.
    Place into pre-heated 375-degree oven and bake about 40 minutes.
    Remove from oven, check internal temperature and apply a liberal coat of ketchup to the top of the loaf.
    Place loaf back into oven at 375 to cook until at least 160-165 internal temp.
    In the meantime, place a tablespoon or two of butter in skillet again.
    Add about 3/4 to a whole large, sliced onion, sprinkle with salt and pepper and sauté the onions over medium low heat, tossing regularly until they have a nice golden color and are lightly caramelized.
    Once meatloaf is to temp and ketchup has set up, allow to cook about 10 to 20 minutes then top with Mozzarella and Swiss cheese.
    Top with the caramelized sliced onion.
    Place under high heat broiler until cheese is well melted.
    Allow to cool about 15 minutes before slicing.

      Its deeeelish. Brother said it would have been better with tomato sauce instead of the ketchup. I dunno, perhaps.

      Welcome, i see you throwing down over there. Going to have to take a good look at doing that Roadhouse herb crusted chicken............... perhaps with some type of pansauce?
