Used this recipe for a 15-lb turkey and it was a huge hit! Best thanksgiving turkey recipe I've tried so far - and I tried >8 recipes from celebrity chefs ❤❤❤
The first turkey made I mesquite smoked for about 8 hours with the stuffing in it. I cooked it in a disposable broiler pan with chicken broth in the bottom with foil over the turkey and tucked around the edge of the broiler pan. Then I basted it about every half hour. The stuffing I added cranberries and cashews to before putting it in the turkey. Mesquite smoking it for around 8 hours gave it a mesquite smoked flavor completely through all of the meat. It is the best turkey I have ever ate and the whole turkey and stuffing was gone before the other turkey a inlaw was cooking was done.

I've made this bird 2 years now, going on my third. This is a no leftovers recipe for sure. You and your entire party will devour it. I salt and pepper the night before in the refrigerator. Then, i let come up to room temp. I also re-butter with the leftover herb butter every 30 min or so until done. Man-o-man 😋... you won't cook a turkey any other way after this. Enjoy. it honestly turned out great!! mine was an 11 pound Turkey and I used the exact measurements for her 9 pound turkey. I found that it was a tiiiiiiny bit salty but still amazing. next year I'll probably do 1 and a half tbsp of salt instead of 2 :) but otherwise it was amazing and this was my first time making a whole Turkey. thanks for the recipe and easy instructions!

Hi! It's really up to you! I always brine my turkey, then add the butter spread the night before to marinate the turkey overnight. It will be delicious without the brine, too! :)
Except for using fresh chopped garlic instead of powdered and baking in covered roasting pan first few hours then uncovering to brown this is just how I have made turkey 15 years straight. Those who don't usually like turkey, love my turkey. Always flavorful and juicy. I'm sure yours is too.

Love this recipe! I have been using it since the year you published the video! I wanted to ask if I could use your wet brine for this recipe as well? I just don’t want to over-salt the turkey. I would consider taking out the salt from this recipe and leave it for the brine but would that be a smart choice? Or do you have a simpler brine that compliments this recipe?
Hi! I'm so happy you enjoy this recipe! Yes, you can use my Apple Cider Brine with this recipe! I personally don't find that it gets too salty but you can reduce the salt by half for the butter spread. Enjoy!

Help!!! I doubled the ingredients and very carefully measured everything but the butter spread tastes pretty salty. Is this how it’s meant to taste, I’m unsure if I need to make a new batch for tomorrow’s turkey?

I hope you give it a try! It's so easy and so delicious! I usually do one day for every 3 pounds of turkey. For a 15 pound turkey, I do about 5 days in the fridge.

The first turkey made I mesquite smoked for about 8 hours with the stuffing in it. I cooked it in a disposable broiler pan with chicken broth in the bottom with foil over the turkey and tucked around the edge of the broiler pan. Then I basted it about every half hour. The stuffing I added cranberries and cashews to before putting it in the turkey. Mesquite smoking it for around 8 hours gave it a mesquite smoked flavor completely through all of the meat. It is the best turkey I have ever ate and the whole turkey and stuffing was gone before the other turkey a inlaw was cooking was done.

I've made this bird 2 years now, going on my third. This is a no leftovers recipe for sure. You and your entire party will devour it. I salt and pepper the night before in the refrigerator. Then, i let come up to room temp. I also re-butter with the leftover herb butter every 30 min or so until done. Man-o-man 😋... you won't cook a turkey any other way after this. Enjoy. it honestly turned out great!! mine was an 11 pound Turkey and I used the exact measurements for her 9 pound turkey. I found that it was a tiiiiiiny bit salty but still amazing. next year I'll probably do 1 and a half tbsp of salt instead of 2 :) but otherwise it was amazing and this was my first time making a whole Turkey. thanks for the recipe and easy instructions!

Hi! It's really up to you! I always brine my turkey, then add the butter spread the night before to marinate the turkey overnight. It will be delicious without the brine, too! :)
Except for using fresh chopped garlic instead of powdered and baking in covered roasting pan first few hours then uncovering to brown this is just how I have made turkey 15 years straight. Those who don't usually like turkey, love my turkey. Always flavorful and juicy. I'm sure yours is too.

Love this recipe! I have been using it since the year you published the video! I wanted to ask if I could use your wet brine for this recipe as well? I just don’t want to over-salt the turkey. I would consider taking out the salt from this recipe and leave it for the brine but would that be a smart choice? Or do you have a simpler brine that compliments this recipe?
Hi! I'm so happy you enjoy this recipe! Yes, you can use my Apple Cider Brine with this recipe! I personally don't find that it gets too salty but you can reduce the salt by half for the butter spread. Enjoy!

Help!!! I doubled the ingredients and very carefully measured everything but the butter spread tastes pretty salty. Is this how it’s meant to taste, I’m unsure if I need to make a new batch for tomorrow’s turkey?
Hi! It's a little on the salty side, but if it's wayyy too overpowering, simply add additional butter to reduce the saltiness. Enjoy!
