I just came back from Ipoh having the same chicken rice. It was oily. Later in the trip, we spoken to one local and he told us that those were tourist trap. The best Ipoh chicken rice are found elsewhere in Ipoh.

      This is correct.
In terms of famous Chicken rice stalls keep being marketed in social media and tourist information, Singapore wins due to consistency.
But the really good ones that can be better than SG ones are hidden around Ipoh near residential areas and not really known on social media.
But one thing SG definitely cannot win is Ipoh's bean sprouts.

Thank you for visiting my 2nd hometown! I'm half Malaysian and spend a good portion of my childhood in Ipoh. Actually what you show is very much mostly tourist spots. Nothing wrong with that. But if you're coming back to Ipoh, I would suggest either Ming Court (Foh San's friendly competitor) for old school dim sum style or Chooi Yue. Consider the Kacang Puteh street at Buntong. CTS is really popular among the locals.

The bean sprout in Ipoh is BEST - it is short and thick. You cannot it anywhere in the world. It is because of the spring water from Buntong that makes the bean sprout special.

Actually dim sum in carts are a rare find even in Hong Kong. It's a dying trait. Ipoh is famous for their bean sprouts and sar hor fun due to their natural spring water used in making them.
I don't think any of the curry puffs sold outside uses real butter more like Planta. The dragon beard candy can hardly be found already. You still see it last time in Singapore's pasar malam.
Doubt they use cumin perhaps 5 spice?
You didn't try the popular salt baked chicken??

  • @AbsoluteFidelity

You are eating kampung chicken, so it wont be as silky as the normal chickens used in singapore. Normal chickens have more fat, hence why it is more glutinous after that ice bath. The advantage kampung chicken has is the meat actually taste more chicken-y and it has a firmer bite, which many hong kong people strive for and like.

  • @lidna82
    @lidna82 Рік тому +23

Malaysia has the advantage of using fresh chicken but the way Singapore prepares the chicken somehow gets ahead in terms of tenderness and sweetness of the meat. The worst I have tried is interestingly from Hainan Island.

In terms of tenderness, ipoh is using free range Kampung Chickens. Not sure how that fares with Singaporeans, but some of the better chicken rice here uses slightlt chewier but more flavourful kamping chicken. Kampunf chicken is actually more difficult to cook as well due to drier texture.

I think the chicken used in Ipoh is Kampung chicken/free range chicken. It's tastier but is also leaner and not as tender. The quality of the rice is also not as good. Ipoh's Taugeh and horfun is definitely delicious due to the use of water from the limestone hills.

If it's a free Hainanese Chicken Rice and it's halal, no matter it's Malaysian or Singaporean...for me that's the best 😅
But jokes aside, I prefer to savour our own home made Hainanese Chicken Rice. Coz I love eating a rice filled with chicken legs, chicken skins and chicken fats and sadly, the commercial one, we don't have that option. Also in terms of originality, major commercial Hainanese Chicken Rice sellers, they quit frying the rice first and just skipped to boiling the rice. So that's already a big reason why I preferred to cook our own Hainanese Chicken Rice traditionally.

The dim sum you had is much more for tourists....Ipoh have so much better dim sum elsewhere..... moreover Ipoh chicken rice is Cantonese style compared to Spore which is more to Hainanese style.... looks the same but have different textures, taste and etc.....

Ghib-san, u should have put some of the bean sprout sauce or the chicken's sauce onto your rice & mix it as it's really a very nice combination
