Chipotle Bowls My daughter who just left for college got to pick all of our meals this past week. She asked if I could make Chipotle Bowls. I thought it sounded like a fun idea and I was up for the challenge. I nailed it!! They were a hit with my family. They all told me how yummy they were and thanked me over and over. ♥️☺️♥️☺️ *I should have charged them extra for the guacamole. 🤑 📝 Here’s how I made it: 1. The first thing I did was make my homemade salsa and homemade pico de gallo. Those recipes can be found on my page. The salsa recipe is in all of my cookbooks and meal plans. www.Kristysketolifestyle.com 2. Next, I drained the beans and corn and dumped them into separate bowls. I didn’t heat them up until we were just about ready to assemble. 3. I chopped up the lettuce so that it was all ready to go but I placed it in a ziplock bag until we were ready to eat. 4. I got all of the ingredients for my homemade guacamole prepped in a bowl but I waited until we were ready to eat to mash the avocados. No one likes brown guac. 🤪 This recipe can also be found on my page. 5. Next, I cut 3 lbs of chicken thighs into chunks and seasoned them liberally with: chipotle powder, chili powder, garlic powder, onion powder, smoked paprika, salt, pepper, cumin and lime juice. 6. I began cooking the chicken thighs on my griddle along with some sliced onions and bell peppers. 7. I squirt the veggies with water and then place a cooking dome over top to help them steam quickly. 8. Once the chicken was cooked through and the veggies were tender, I brought them inside. 9. Lastly, I heated everything up which just took a few minutes and then placed it all on our island. 10. Everyone grabbed a bowl (I found the perfect ones on Amazon) and started assembling theirs to their liking. *In mine, I did lettuce, chicken, fajita veggies, cheese, pico de gallo, guac, sour cream and salsa.
