Friday night is cocktail night and this just made the list! Been sitting on a gifted bottle of Empress Gin since April, looking for something worthwhile to break the seal for, and I think both of these cocktails fit the bill.
I was pretty pumped about the concept but without any scotch in this drink I feel baited. Penicillin is more of a whisky drink than a than ginger one but I see how the dots connect here. Regardless it sounds delicious and I’d happily be served this any day I’m sure. Excited to break out the sous vide and give this a try.
Brilliant as always! I was wondering if you might make a video or a few on using interesting ingredients like truffles.. are there other good mushrooms we could use in cocktails? What's up your sleeves my friend and is it ok to plagiarize? 😆
Looks really creative and I'd like to try it. However, could I make the ginger / licorice syrup with a small saucepan on low simmer instead of a sous vide machine? I don't want to buy and store a sous vide machine just to make a drink at home.
Hey Eric, You can always get away with the good old simmering method BUT this will cause evaporation so I recommend you do it without the sugar and then, when your happy with the intensity of the flavor, filter if and use that as you water to dissolve your honey. Cheers!

It's definitely a gimmick gin, but it's good at that job, and so I keep it around for that reason. I'm pretty partial to Oxley and The Botanist as far as big-name distillers go, but for a lot of people, Empress is good enough, and the colour appeal is the selling feature.
am i the only one who finds empress gin to be highly overrated and one note ? maybe my taste buds are off but it lacks character. there are so many gins in the same price range that i would place over it.. i think people are paying for the color. very nice color indeed tho.
in canada it's around the same price as Fynbos gin from south africa, which is just night and day to me. Incredible gin. It also kinda irks me that they fully market this for cocktails yet it's very expensive for something you'd put in a cocktail just to taste like gin. the butterfly pea flower trick is old news now and other companies are using them. people will forget about this gin. @@philipmoser3784

You can often find it at health food stores. Failing that, Amazon or online herb/spice stores are your friend.

nah you hit the nail on the head. It's a $20 gin and they are charging an additional $20 for the butterfly pea lol.
