HOW TO MAKE: Rapini Burger

    Ingredients:
    1 lb ground beef brisket
    1 tbsp maldon salt
    1 tbsp black pepper
    1 white onion, sliced
    1 jalapeno, sliced
    250g smoked scamorza, sliced
    4 potato buns
    Rapini:
    1 bunch rapini, ends trimmed and cut in thirds
    2 tbsp extra-virgin olive oil
    1 garlic clove, sliced
    1 red chilli, sliced
    salt, QB
    In salted boiling water, add the rapini and cook for 1-2 minutes then remove from water. In a frying pan on high heat, add olive oil, garlic, chilli flakes, and the blanched rapini. Sauté for a few minutes and soft. Set aside.
    In a large mixing bowl, add the beef brisket, salt, and pepper. Mix well. Using your hands, scoop up the mixture and shape into balls about the size of a golf ball.
    In a hot frying pan, add a small layer of onions, jalapenos, and place the meatball on top. Smash down with a metal spatula until patties are slightly wider than burger buns. Once the patties are cooked and crisp, flip onto the other side. Place the sliced scamorza in the pan next to the patties. Cook the scamorza for a minute or until melted and crispy, then add on top of each pattie. Remove from the pan. Serve two patties with cheese on each potato bun and top with rapini. Enjoy!
