Yes, you can use coconut milk. If you don't have you can skip also.

Its our fav mutli (dumplings) and panpole.even now its our regular sunday breakfast.but we dont make the dough liquidy,we make it thick and add grated coconut and little jaggery and steam it.

Both these recipes are our Mangalorian. Thank you for sharing. We add tadka of coconut oil, Rai and Curry Leaves to the dumplings batter and then place the pan on gas for thickening.

In my childhood, I remember my mum grinding the rice coarsely with very little water on the grinding stone... The batter used to be thick just like the above.. The dumplings were then formed like shown in the video and steamed. We call them "mutli" in Mangalore and is served with chicken /mutton curry ...

Why does the second dish needs two cookings!!is it compulsory.
Yes it is required. We are using raw rice to make rice ball. We cannot grind soaked rice without water. Once the batter is liquid, again cannot make a ball. So we will grind the rice with good amount of water and boil until it thicken and make a ball. this might be half boiled. Finally cook perfect by steaming. This way the rice ball retain the softness. This is how our traditional way cooking.
Raw rice or boiled rice. For idly total water multiples pls
Raw rice. For rice ball you can use parboiled too.
Ratio of water (rice balls)
1:2.5 (or 3)
