Silicone liners can also be used for individual portions of mashed potatoes or savory stuffing. Just fill the cupcake liners and freeze. Then reheat in the microwave.

These egg muffins are wonderful fresh out of the oven but they can also be made ahead and refrigerated up to 5 days or frozen (see freezing and reheating instructions in my recipe notes).
I'm making these for like the third time, and then I'm making 12 Mexican style with chorizo in place of bacon and queso chihuahua in place of chedar, yum!!!
I know you mention that leftovers could be frozen, but is it possible to preserve egg mixture (in its liquid form), with all ingredients added to it, in fridge to bake another fresh batch the next day? If so, how long could I keep the liquid refrigerated? Thanks for this recipe. Trying it out this weekend.

Hi! You can use without liners but I found it difficult to remove from the pan, sometimes even after greasing
