Oh my goodness Mary thank you so much! My daughter just broke her arm last weekend and I've been helping her out with her household. Her young ones are starting school next week. These will be perfect to make ahead for them to heat up before school. God Bless!
I just started watching you a few weeks ago, and I haven't stopped. And i I don't think I ever will. I love your wisdom and knowledge. I am a young stay at home, wife, home education mother to 3 young kids. And I just love how you explain everything and so genuine and kind. I pray the lord gives me that soft, gentle, handy woman hands like yours. Be blessed and thank you for what you share.
I am going to make some of these so I'll have something quick for breakfast this next couple weeks! Canning season here in Iowa, I made pickles last week. I picked 15 gallons of tomatoes the last 2 days, with 5 gallons of grapes & apples & morecoming....😳🤷♀️😁👩🌾
I literally just pulled some out of the oven and they were perfect! I am so proud of them! That might sound silly to some but I’m getting started with Nourishing Traditions and have been relying on processed foods for a long time so for me, that’s a win 🤣 Thank you Mary! 🥰
I love the idea of breadcrumbs on the top (clever) - I like to make frittatas - I think I am going to try this recipe in that format some day very soon.
Your video is so thorough here! Thks! I do many of these things already…..but your video is a great reminder of prep…..and your info is so useful for new cooks!! All hail to You Mary!!! Appreciatively, Ahna
Yum, these egg muffins look delicious! Sautéed onion and potatoes is such a great idea. I buy the Jimmy Dean egg and sausage Delights but can get expensive and these are a great alternative. Love your cheerful attitude. Thank you or the wonderful recipe.
Scrumptious! Thank you. If you don't have time to do the potatoes, I just break up small bits of bread - any bread will do - and put them in the bottom of the cup instead - then pour the egg mixture over. As for the onion, I use a pepper-onion frozen mix from the supermarket - chopped up of course! Only $2.49 for a 1 lb. bag!
Hi Mary, I have been making these for a long time. My diet doesn't allow potatoes or greens. I saute tri colored pepers, onions & taco or italian seasoning & use egg substitue with skim milk & cheese. They are so handy & freeze well.
Sounds good but I am a type 1 diabetic and can’t eat bread or potatoes. I have to eat very different from most people. I do enjoy your channel a lot. Thanks Mary 😊
Sounds mouthwateringly delicious! I will definitely be giving these a try! I make your cream cheese and sour cream on a weekly basis, which is a real godsend since I can't source them organic in my local stores. Thank you and God bless! ❤️

This looks so good! My grown son is on the Keto diet. I think I can modify your recipe to make it Keto by eliminating the potatoes and bread crumbs.👍 Thank you.
Hi Deborah, Thank you so much for the kind words! I often find some nice eggs from local farms plus our friend's children raise chickens so I try to buy eggs from them as often as possible. For meat, I usually search out a fellow that I like at the local farmer's market. And when beef, etc., runs low here to do drought, etc., then I love to order from US Wellness Meats. I have been doing that for years. If you ever decide to check them out, be sure to look for the 15% discount for them on my shopping guide: marysnest.com/shopping-guide/ Love, Mary
Fantastic recipe! My family loves muffins so much I feel like I am raising two little muffin men! I think they would eat muffins every day! I’m researching muffin recipes for a cooking video I want to make. This is inspiring! I’ve learned some new things from you! I hope we can learn from each other!
OMG 😱, Ms. Mary’s Nest I truly love this Video…Love eggs 🍳 and you showed my some new egg tricks…Thanks again for always helping me figure out how to cook 👩🍳 in the Kitchen..🥰👏🏾
Stopped by! 😘 No matter how I try I always struggle with water issues when reheating breakfast items I have frozen. I need to master this. Love you! ❤️
I love that you said you’re not a fan of the microwave oven. I love that! I am also not a fan. Would you be willing to share your reasoning behind not being a fan? I’ve tried to convince my family that they are not a good idea. As I am the cook of the house and the kitchen is my second office I would not be mournful if it broke.
My Japanese heritage uses diced, quickly sauted Spam. Yes, I said Spam. A great deal of Honolulu "street food" uses Spam so since it was a pantry staple in our kitchen for decades, I still grab a can from time to time to use for breakfast muffins like these, or fried rice, and even fried in place of bacon or sausage for the breakfast meat with scrambled eggs! :)
I don't have a muffin pan, but I do have a cast-iron frying pan, and I can see this as a pseudo-quiche. Thank you. I'm guessing they are good lunchbox items. Can be eaten room temp.
Great question. I would wrap them in plastic wrap and then put them in some sort of freezer container/bag. That’ll be the best way to prevent freezer burn. Love, Mary
I love to see that I'm not the only one brewing coffee "in the back" whilst in the kitchen 😊love your cooking ideas. Just a quick question how long can bone broth last in the fridge? How many cups do you need to drink to reap the full benefits? Do you maybe have a broth recipe for vegetarians? 🥰
Hi Yvette, yes I do have a broth recipe for vegetarians: ua-cam.com/video/SFz_4gIZVik/v-deo.html I also have some super mineral broth recipes that are wonderful as well for vegetarian: ua-cam.com/video/x4lI5FnBF8g/v-deo.html and here: ua-cam.com/video/ebssDl7AroM/v-deo.html As to the freshness of bone broth, it stays fresh in the refrigerator for about one week with no fat cap. If you leave the fat cap on, it will stay fresh for about two weeks. Love, Mary❤️🤗❤️ …from one coffee lover to another!!
@@MarysNest Hi Mary thank you so much I will check the link. Will the vegetarian and mineral broth have the same benefits as bone broth? Thank you for your quick response🥰☕☕
Hi Elaine, if you open the description under the video you’ll see the word recipe with a link next to it if you click on that it will take you directly to the recipe that you can read online or print out. I have seen other recipes that are similar, but yours sound better! The others didn't have the potato, greens, or the crisp bacon on top. They were basically onion, eggs, diced ham or other meat, and cheese. Some added bell pepper. I will have to try these after I get paid! (I don't have bacon or potatoes on hand)
Mary, would you mind doing a video explaining the difference between, onions, scallions, chives, leeks, etc... I've been wondering for years. I have looked some of them up bit I'm stoll confused.
Thank you so much for this recipe! When you are talking about individually wrapping each up to freeze-what would you suggest using? How long will these be ok in the freezer?-Thanks again, Diana
Hi Diana, I would recommend wrapping them in a plastic wrap and then putting them in an airtight container. This will help prevent freezer burn. Love, Mary
I don’t specifically have a quiche video but I have a lemon arugula tart that’s delicious: ua-cam.com/video/Xa3VGxu09Hs/v-deo.html But I will add quiche to the list! Love, Mary❤️🤗❤️
@@MarysNest thank you so much...love Yvette...but I'm Definately going to make the egg muffins...I actually did make it once but added tuna and it made the batter to wartery so I added 100g oat flour🤗
A delicious recipe...I do miss Las Vegas, Nevada a great deal because when I was living there I had the money necessary to eat out. I don't like cooking This is the reason, I cook a piece of meat with salad, or more meat with some potatoes and carrots or sweet potatoes. Mostly, I eat salads with a can of tuna because is easy to make and there is not a lot of cooking.
I make these every Saturday. However, I'm really lazy and I never have milk in the house. I mix the eggs with a splash of water and add chopped roasted vegetables (I make a pan of roasted veggies every Friday). I might add some grated cheese if I'm feeling fancy. It comes together in no time and I have breakfast for half the week.
Great question. If you want to use less egg yolks, you want to substitute two egg whites for every one whole egg you eliminate…But I would recommend that you use at least one whole egg. Love, Mary❤️🤗❤️
@@MarysNest thank you so much💚 You explain everything perfectly.. it’s a pleasure to watch your channel.. Made your bone broth Dried herbs All turned out wonderfully as per your excellent instructions💛 Pickling will be next.. 🧡💙❤️🧡💚💜
Hi Mary I have a question but it's not about this video I hope this is okay but I'm trying to learn to ferment and I'm watching your videos but I think I messed up fermenting my pickles one of them grew mold on top of the water and the other ones I don't know if they're done but it's been over a week how long do I ferment these pickles and thank you so much for putting these videos out to teach us things we didn't learn when we were little
Hi Lola, all great questions! Don’t worry. Some thing that I always like to share with beginners is that ferments can be persnickety! Most vegetable ferments like to be fermented between 68°F and 72 2°F. If it gets warmer you risk the chance of mold and bad bacteria developing. So first and foremost you want to make sure you get them fermenting in a place where the temperature is going to give them the best chance of succeeding. Then, I often recommend that once you start to see some bubbling activity in the jar go ahead and refrigerate it. It will continue to ferment but just at a much slower pace but now you have significantly reduce the chance of developing mold. Hope this helps. Try again and keep me posted and let me know if you have any more questions. Love, Mary❤️🤗❤️
Just a note ,if you have gas stove you don’t need to turn your oven on until your nearly done prepping your food .at least mine heats up very quick..maybe all dont
Hi, first I didn't go all out as you did for making these for the 1st time. Mine consisted of eggs/tomato/pepper/cheese/potato. I bought some paper liners for my pan, and they cooked up fine. The down side, was they stuck to my paper liners, a LOT. I had to scrape a lot off of the liner. Did you use a certain type of liner? Did you spray with PAM off camera? Mine were plain white paper, definitely the wrong thing to use. Thanks!
Oh dear!! So sorry to hear that your liner stuck. Were they older liners? The liners are used were made from brown recyclable paper. And they were new. I think most cupcake liners today have some sort of nonstick coating on them. I didn’t spray mine with Pam or anything like that. I would check out the baking section at your local grocery store and see what you can find as two liners and see if they mention anything about being nonstick. Love, Mary
@@MarysNest I bought them at walmart. [doah!] I stopped at 2 other local grocery stores and they didn't have large liners to fit my pans. Perhaps I'll look online.
Made these over the weekend and only had 1 small problem. The cooked egg mixture stuck to the paper muffin cups I used. Had to tear the paper off in strips. Next time I may just grease the muffin tin and run a knife around the egg mixture after it has cooled down some and set up. Unless you have any suggestions for using muffins cups.

Great question Terri, I would just leave the potatoes out and maybe add a few more veggies. Love, Mary
I love making these! It’s nice to see your spin on it. Gives me great ideas for next time I make these. I love your channel! 💕 Jes
Mary, would you mind doing a video explaining the difference between, onions, scallions, chives, leeks, etc...
I've been wondering for years. I have looked some of them up bit I'm stoll confused.
You are so sweet! I will try to make them for my kid :)
Love, Mary
They are delightful
Hi Mary do you have a nice quiche recipe? I have my mom visiting for 6 months and she loves quiche 😊
I don’t specifically have a quiche video but I have a lemon arugula tart that’s delicious: ua-cam.com/video/Xa3VGxu09Hs/v-deo.html But I will add quiche to the list! Love, Mary❤️🤗❤️
@@MarysNest thank you so much...love Yvette...but I'm Definately going to make the egg muffins...I actually did make it once but added tuna and it made the batter to wartery so I
added 100g oat flour🤗
Yummy!
I made this it was delicious!!!
Do u have a recipe for blueberry muffins?
Hi Mary, I don’t… But I’ll add it to the list. Love, Mary
Looks delicious!
Hi Mary thanks for the video. Just curious do you make English muffins?
If I wanted to reduce the egg yolks how many egg whites would you recommend I use?
These breakfast muffins look delish..
Great question. If you want to use less egg yolks, you want to substitute two egg whites for every one whole egg you eliminate…But I would recommend that you use at least one whole egg. Love, Mary❤️🤗❤️
@@MarysNest thank you so much💚
You explain everything perfectly.. it’s a pleasure to watch your channel..
Made your bone broth
Dried herbs
All turned out wonderfully as per your excellent instructions💛
Pickling will be next..
@@MarysNest Thank you so much they where no good but I will definitely try again when the weather cools down 🙂
Hi Mary! Is there any reason why you guys use 2 different coffee makers, if I may ask? Hugs from Italy
Great question! I have two coffee pots because my husband likes decaf and I like high test! LOL! Love, Mary❤️🤗❤️
Mary, can you make some gluten-free, vegan blueberry and apple cinnamon muffin recipes?
Sounds fascinating. I’ll need to research it. Stay tuned. Love, Mary❤️🤗❤️
@@MarysNest I know u can do it! Your an expert at the nest!😀
Just a note ,if you have gas stove you don’t need to turn your oven on until your nearly done prepping your food .at least mine heats up very quick..maybe all dont
So tasty 😋
Hi Mary !
I'm not a huge fan of cheese (any kind). Would this recipe 'work' without them ?
Definitely! It’s very flexible. 🤗
@@MarysNest Thank You, Thank You. I was concerned the cheese acted as a 'binder'... in which case it wouldn't hold.
No not at all. The eggs will hold everything together. ❤️🤗❤️
