Thank you !! Keep in mind, that you can make the Bearnaise sauce using the whole butter as shown in the Bearnaise video or you can use clarified butter as shown in the Hollandaise sauce video. Either approach works perfectly !! Have fun !!
Sounds like a plan. I failed to mention in the video that small balls or squares of cheese (cheddar, Swiss & goat especially) are also great when stuffed into the center of the round versions. You also might have problems keeping them square throughout the handling processes. I'd probably put some bread crumbs into the mixture for the squares so the mixture wouldn't be so pliable.
Yes you can, but keep in mind that the crispy exterior, which represents half of the eating experience will be difficult to attain. That's why croquettes have been usually fried throughout history.

Be careful that they hold together throughout the fry/handling process.
