Another reason is if you sinker line is too long. It causes some resistance which results in the spiralling.
Hi it maybe a stupid question but with the weight clipped onto the dingle how does the fish get to your bait. Im guessing the minute it hits the water it unclips and moves away from the bait, what ensures every cast that this happens?
That is correct as soon as it hits the water they seperate.

If u refer to the mono leader that generally is about 1 to 2m depend on u and rod length etc .
The braid leader is one and half time rod length
