  • • Ingredients: fillings
    All-purpose flour 500 grams, 0:29,
    White granular sugar 25 grams, 0:29,
    Oil 50 grams (light taste oil is better), 0:31,
    Water 270 grams (room temperature), 0:43,
    Pastry: get 250 grams of oil and heat until it slightly smokes, then turn off the heat first, and then add 250 grams of all-purpose flour and stir evenly, let it cool before using, 1:21,
    Sugar fillings: get 200 grams of white sugar, 50 grams of all-purpose flour, and a spoonful of black sesame seeds, then stir evenly 1:48,
    • It is recommended to use the kind of oil with light taste, such as corn oil. The dough should be relaxed until it does not rebound when pulled or pinched before we start making flatbread, otherwise it will break easily while being handled, and the white sugar will flow out when baking.
    • Baking temperature (80L oven): Preheat the oven to 200 degrees for top heat and bottom heat. Bake on the middle rack for 20-25 minutes. If you prefer it to be more crispy, bake it for a few minutes longer. A smaller oven usually provide more heat, so please reduce the temperature by 5 degrees for every 10-liter reduction in oven capacity.

    今天实操2次,用的是空气炸锅,第一次成果外皮很硬,第二次加热开始,中途 喷了2次水,外皮酥的效果改善很多。还没完全领会面卷起的手法估计是我擀的太宽,拿起面拉薄的时候,一下就拉的很宽,而且拉伸幅度也不统一,结果.....又细又长。还是要再试验几次。不过第二次明显比第一次好一些。手艺就是手艺,是看不会的,还是要真材实料的练习,感谢!

      完全可以。今天做了2次,都是用的豆沙。
