  • What to do if a jar doesn’t seal, you have asked me through the years…

    Well, no worries, if you wake the next day to find a jar has not sealed, simply either reprocess it (not my choice), use it right away in a meal or put it in the icebox to use within the week. It’ll be fine. This used to happen to me in years past.

    Nowdays, I don’t have that issue since I use high-quality, made in America @superbcanning lids. They are the only made in USA lids I know of, folks. Check them out here (affiliate link) www.lehmans.co...

    So, stay right with it. You can can🙌🏽 and you can save and use those jars that don’t seal.

    I meant to say silly vacuum versus cooking pressure What is the difference type of items

      I think you mean vacuum sealing? Vacuum sealing mason jars is used for dry foods - things like dehydrated items, rice, spices, etc. Pressure canning is used for low acid foods like fresh meats and vegetables. Hope that helps.

      Water bath canning is used for foods with high acidity levels, such as pickles, jams, jellies, most tomatoes (sometimes things like lemon juice, vinegar, or citric acid need to be added to tomatoes to assure they are acidic enough to can this way). Pressure canning is used for foods with lower acidity like meats and vegetables. Canning is a fun way to preserve food for your family so that you know exactly what is in the food and where it came from. I encourage you to research safe ways to can and give it a try! A good place to start might be the National Center for Home Food Preparation: nchfp.uga.edu/ .

      Also, if you are in the United States, there are county extension offices in almost every county of every state that often offer classes and help getting started canning. They are good resources!

    I canned beef cubes for the first time last night, however 1 didn’t seal. I put it in the refrigerator this morning but I am nervous eating it. Is it still good? Should I reprocess it? Thanks in advance for your reply :)

      This has happened to me a few times. I have always put it in the fridge and used it within a few days. I don't reprocess because that would involve reheating the contents, jar, etc. That would be too much cooking it down, I feel. I am very comfortable eating the product and I know other canners do so as well. I hope that helps. Good for you canning beef cubes for the first time!!

    I just canned quarts of apples, it seemed as if they were only half full of the liquid even though I removed air bubbles, I’m recanning them now with more liquid, is this safe to eat then?? I don’t care that it’s mushy... don’t want to waste the apples! 😂

    Why are the seal failures not repackaged and reprocessed with a canner load for the same timing?

      They can be! I typically don't do that because it doubles the cooking time which could result in a messy, soggy product. But, yes, it can be done.

    My diced tomatoes did not seal. I plan on reprocessing tomorrow. Do I need to heat up the tomatoes in a pot? Also, do I need to add citric acid and salt again to the jars?

      You can do two things: Refrigerate and use soon and don’t worry about reprocessing. Or, yes, go through the process again by reheating the tomatoes. I have been canning for over 40 years and never used citric acid. I used to add salt but learned a few years ago that that is not even necessary. I would use new lids, if reprocessing.

      Hmmm….I never reprocess, I just use them (or you could freeze them). The reason is bc that is a lot of processing for that batch of tomatoes. But, I would think that you’d need to heat contents and jars if reprocessing. That’s just me. Do what you think is best for your kitchen. Hope it works out well for you!
