    YES! I just made a bunch of cupcakes and a 6" baby cake for a wedding last weekend with cinnamon Swiss meringue buttercream. Sooo velvety!

    How do you prevent your cake from getting soggy from freezing it over night?

      as long as it has cooled fully before you freeze it - it wont go soggy. If it is still warm, then it will sweat in the freezer and go soggy :) So just make sure the cake it totally cool.

    Great recipe Matt , honestly I find the upside down drip cake even better looking than the right way drip cake !! So small amount of effort (yet a big amount of fridge time!!) and such a beautiful and festive looking cake !!

      I haven't tried but it should work. the buttercream would be a bit lumpy though from the fruit

    Love this! But I was wondering once you take the sponge out of the freezer do you need to let it defrost before cutting and icing? xx

      +Dina Darweish nope I used it straight away as it makes them so much easier to decorate with. I make my cakes in the morning so by the time I am ready to eat in afternoon/evening everything will have defrosted!

      +Lidia Herrera it's a 6" cake! I think it's about 7" tall too. The Swiss meringue buttercream recipe in the description box should cover the whole cake no problem :)

      you totally can! You just need to cut out the centres and fill them while you are stacking it :)

      I don't usually, as i will make a cake in the morning and by the time i am ready to serve later afternoon it is all defrosted! They are just much easier to decorate when they are frozen!

      it should be ok as the cakes dont become soggy as they defrost - just make sure you add sugar syrup to each layer!

    I have never heard of putting sugar syrup on cake. I am 31 and I have been baking with my grandmom since I was big enough to stand on a kitchen chair. I don't typically have dry cakes either whether it's a pound cake, chocolate cake or sponge cake.
