You made me cry. My mother made fruitcake every year. We always got a small one at Thanksgiving, but she aged the big one for Christmas. Mom has Alzheimer's now and doesn't cook any more, but as I watched this video I was a kid in mom's kitchen again. I love your voice and your joy as you describe everything. Thank you for bringing back such beautiful memories. I'm going to try your recipe. Keep doing what you're doing - it's more than just food.

Reminds me of my Mom's friend (who has passed on) who always made my favorite fruitcake - I don't think she realized how much I loved it sooo much. I make it every year but it never seems to taste as good as hers. Your fruitcake looks like hers so I'll give it a try. Thank you so much! The recipes I tried are quite a bit healthier and so they just didn't make the cut as far as taste. This year I'm going for taste.

Russell Merritt, you just gave me goosebumps... You're a special man to share such candid and sweet memories of your mother...and I share your nostalgia & sentiment having lost my mom 6 years ago.
May God bless your mom with comfort and peace & keep both of you safe in this time of C19.
      🙏 ❤

I hope your mother is doing good. My mother doest cook but she was one hell of a dancer when she was young and loves food. As she grew older, she ridden with alzheimers. We lost her in Dec 2023. From one child to another, I am thinking I should give fruit cake baking a try.

I just finished making the fruitcake. I added the grated rind of one orange, a tablespoon of vanilla extract, half a teaspoon of nutmeg and a quarter cup of Amaretto. It's really good! But both my husband and I thought it needed more of a spice kick; we could hardly taste the cinnamon. I will definitely make it again because it was so simple in the three tins filled almost to the top, and the timing was exactly 3 hours @250F as the recipe showed. So next time I make it, I will add more cinnamon, more nutmeg, cloves, a teaspoon or so of salt, and more booze! to make it just to our liking. Thanks Deronda, and Merry Christmas!!

I have used this recipe for 2 to 3 years now thank you so much it’s absolutely my favorite. I am editing. After tasting my fruit cake many times after it cooled I added more spiced rum to the baked cooled cake repeatedly. Every so often. The desired effect was a dry cake became moist with rum and elevated the flavor. Just the way I remembered from my youth.

I started on this fruitcake yesterday. I am soaking the fruit now. I did not have apple chips so I used apricots and some figs. I also put about a quarter cup applesauce and some spiced rum. This is my first fruitcake. I am one of those people that have never had a fruitcake that I did not like. Maybe a dry one before but I just ate it with my coffee. I am so excited!!! Oh 1/2 cup was not enough rum, my fruit soaked it right up.

I am so happy. I made your fruitcake and it's so good, a piece of fruit in every bite. The second one I have ever made, and I am 80 soon to be 81. lol. I tried another one on youtube where she said non fail. When I tried to pick it up to set in a shipping pan to my sister, [birthday today Jan 30] it just fell apart. I tasted it and it tasted terrible. Threw it out and your's has held up great. I soaked the fruit, [she can't have any nuts, but the pineapple is kind of crunchy, and no apples] with Cherry Merier liquer... I had enough for a loaf pan and we have eaten almost all of it. Every day I put the liquer in the holes and over the top. Double yummy...Thank so much. And I know my sister will thank you. She is 81 today..Yippee. Happiness is a good fruitcake.

Thanks. We have one slice of our small loaf fruitcake, and we are both keeping an eye on it lol. We have mailed the big fruitcake to my sister, and she should get it in about three days. I will tell you, word for word, what she say's. But she doesn't talk much, unlike me lol...Thanks again.

    • @DIANNEELEE
      @DIANNEELEE 7 років тому +3

Also, I put a pan of water in the oven, on the shelf under the fruitcake, And the name of that liqueur, I never heard of it before but $40 what they call a big bottle and $20 for a little bottle and It is called Grand Marnier and it is orange flavored, not cherry darn...Next time I will find something else but sure is delicious. lol. Maybe some kind of rum.

EmeraldCity I know you write long time ago, but let me tell you that you are an inspiration!! The Grand Menieur is a brandy and is normally used to hydrate the fruit cake each week until Christmas. The next time you make it use rum or whisky.

Can I use apple juice or any other liquid beside the brandy? Is the apricot brandy sold on the grocery store or do I have to buy from the liquor store.

Thank you for this recipe. It is like the one my late aunt used to make every Christmas. She was diabetic and couldn't eat them but she gave them away every year. They were delicious. I'm allergic to nuts now so I couldn't eat hers now. She died in 2006 four days after her 100th birthday. She made fruit cakes, cakes of all kinds, jellies, her dresses and skirts and crocheted not reading instructions and drove, took care of her house and cooked. She only had a third grade education but so very smart. She gave up driving when she was 85 and did all of the other things until she was 96 years old. Her twin brother died when he was 53 years old.
She always soaked her fruit cakes in whatever wine she bought. She would wrap white paper towels around each one of them and pour wine over each. She would do that often when the paper towels started drying out. They stayed in her refrigerator soaking until she was ready to give them at Christmas. They were so moist and delicious.

I made this recipe and it is ThE Best Fruit Cake I’ve ever had in my life! I made a few substitutions here and there with the fruits. Also, I baked mine in miniature disposable tins and they were completely baked after 2-2.5 hours so check the little guys early. Also, you must heavily grease AND flour the tins or I guarantee you, that cake isn’t coming out! I will be adding this recipe to my absolute favorites!! Thank you so much!! 😁

This reminds me of my mother's fruitcake. She also used to give them as gifts every year. Folk would look forward to receiving them too. She used to bake them inside lined cookie tins- the ones with lids, and then soak the top of the cakes with rum before giving. YUM-YUM dang it!
Anyway, pardon my trip down memory lane. Mom passed on decades ago.
At any rate- I intend to try this. Thanks for sharing.

Using this recipe, I tried making this fruitcake for the first time.
After a few minor ingredient changes, I was able to convert a few haters, to lovers.
I sauted one cup of maraschino cherries, half a cup of pineapple, and 2 tbls. of orange peel bits in cherry brandy. Mixed some of it in batter and the remaining as a last minute topping before baking.
Just replaced the red and green cherries and the Citron. Also, used dried apricots and dried apples to replace all of the sugared , candied fruits. One last change, I used a cup of cherry brandy (couldn't find the apricot).
However, using this recipe inspired me to take on this labor of love. It was so worth it and I am thankful the time was taken to share with all of us.
    Happy New Year !!

I made this recipe last Christmas and my family loved it!! It was my first time and I'm so pleased that it came out so well!! Why buy the stuff in the grocery store with the chemical additives and corn syrup when you can make the best yourself?

Nice recipe. Thx. So many people hate the stuff and would just as soon use it for a door stop but I always LOVED fruit cake. When I was a kid in Germany, I belonged to an Explorer Scout group. We'd go to Wiesbaden Air Force Base and buy old WWII 'C' rations to take along on camping trips for around $3 bucks per case. One of the things in the boxes (aside from the cigarettes, morphine syringe tubes, general dinners, toilet paper and P-38 can openers....) was canned fruit cake. I'd fight over it.
My Mom used to make 'em for the family and I've been making them ever since. I use dark spiced rum to make mine. I'll let it sit all year long wrapped in foil, pouring a little more rum on it every once in a while and just let it pickle. By the end of the year....(if you can wait that long), THAT's just good stuff.
