- Easy rum and raisin cake recipe for new year! #asmr #asmrcooking
Ingredients:
whole wheat flour : 1 cup
1 tsp baking powder
1 cup organic sugar
3 cloves, 1/2 inch cinnamon, a small piece of nutmeg, 4 cardamon seeds.
salted butter: 2/3 cup (133 gms)
3 eggs
1 cup black raisins
1/2 cup raisins
3/4 cup rum
(If using salted butter, avoid salt. Dont forget to preheat oven. )

Method:
Soak raisins in rum, overnight
powder sugar with cloves, cinnamon, nutmeg, and cardamon
mix butter and powdered sugar
Add eggs one at a time
sieve flour with baking powder
add little flour, soaked raisins, strained rum into the sugar/butter mix.
Bake in preheated oven for 50-55 mins in a preheated oven at 180 degree C.

Hi Nisa, this is a fabulous recipe. Just had one question. I've doubled all the amounts of the ingredients, so does the baking time still have to be 1 hour or should it be more?

Nisa ma'am I tried this cake yesterday and it was so so yummy... thank you so much... the butter sugar egg batter wasnt as creamy as yours despite the hand mixer so I added a little milk.. cake was baked perfectly in my aluminium round mould for exactly 50 min... you're just awesome...

Wheat flour is healthier option as its made of whole grain. You can replce it with all purpose flour too.

Use old monk rum.
Old monk is the best rum for cakes. But better to soak two weeks for the rich flavour. Don't worry all alcohol will vapour while baking

Big shout out to you Nisa. Cake came out fabulous. Its getting polished off as I write this. Thank you so much. Wanted to share that my batter was quite dense as compared to yours. After you were done adding three eggs your batter was liquidy but mine was dense all the way till I transferred it to the pan. Used wheat flr, regular sugar and everything as mentioned. Just wanted you to know. Thanks again.

Is there no need for baking soda along with baking powder in this recipe?
To balance baking soda we need an acidic agent in the cake. Since there is no such acid based ingredient, she might not have used baking soda.
