For older version without easy rounded corners, Choose Effect > Stylize > Round Corners. (The command is located in the first Stylize submenu.) To define the curvature of the rounded curve, enter a value in the Radius text box, and click OK. If this helps.. I think shape builder is quite the hassle!
I know this is old, but in case anyone is wondering, you should make the radius exactly 1/2 of the width of the objects you are rounding. (in this case, that means round it with a radius of half the width of the trails.)

For anyone who's wondering... you first have to hold to align and only then hold 'shift' to align points along the anchor point, not vice versa, because that would switch "Direct Selection" to "Toggle Direct Selection" mode, rather than move your selection. It's jsut that it wasn't explained in the video
Great tutorial! You can also create straight lines with the pen tool or line segment tool and give them desired stroke heaviness, then give them the round caps through the stroke panel and then expand them. It takes a minute and it is also a good approach to this style :)

This is for setting BG Color, quoting +Shaquille Hinds (EveryNothing) from the comments far too deep down there: There are two methods to changing the background color. The easiest is to draw a rectangle the size of the artboard, fill it with your color, send it to the back and lock that layer but this can be difficult to work with when sending objects to the back because whenever you send an object to the back it will go behind the background layer. The next method would be to change the properties of the artboard in the Doc.Setup. For this method all you have to do is uncheck Simulate Colored Paper and set both grid colors in the transparency section to the exact same color. You can do this by choosing a color you want when you are choosing a color for the white box then click Add to Custom Colors in the color selection window. This will save your color in your Custom colors, then click ok. Now change the color of the grey box by clicking on it to select a color and then choosing your custom color from the custom colors section. Click ok to apply the color and then click ok to exit the Doc.setup window. You will notice nothing has changed, this is because the transparency grid is still hidden so to make it visible press SHIFT + CTRL + D on your keyboard. This method turns everything inside and outside the artboard the same color but at least you can send objects to the back without any trouble of hiding them
