It rained today and I was craving Korean pancakes but I had no proteins (I usually make haemul pajeon) and this recipe was perfect! I just omitted the tempura mix as all I had was pancake mix from the Korean market. They still came out crispy and delish! I made 2 batters...one just how you did here and another with both the mix and egg. I liked the one with just the pancake mix as it was both crispy and chewy 😋 all that was missing was makgeolli! I make a very similar version, but include some seafood melody with extra sliced halved shrimps, and strings of beaten eggs while frying. The zucchini and protein makes it more of a meal.

Organic sunflower oil works terrifically for fried stuff..Brian Lagerstrom has a knockout recipe for quesadillas with homemade tortillas that I discovered how great the organic sunflower oil works both in the tortillas and for frying..I made his quesadillas over and over when I first discovered it..his ciabatta also changed my life! I’m heading to my local Korean market now for supplies!
I would saute the vegetables first and then pour the batter in because the batter doesn't take that long to cook then you don't have to add so much oil and you can make it as crispy or not as you want
@@brendam4119 Hi 👋 You can make it anyway you like. As for adding extra oil to make it crispy, this is to make the batter crispy, like pan-fried. You certainly can add less oil, if you don’t want it crispy, as noted in the video. As for pre cooking the vegetables then adding to the wet batter, by the time the pancake is pan fried, the vegetables will cook more and become softened/steamed vegetables, and not have that bite. In general, for traditional Korean pancake cooking, we don’t precook the vegetables then add it to the wet batter. BUT please make it the way you prefer, as you might be happy with the results🙏
I have 2 Zucchini plants in my garden and they are giving…I shall do this… funny …my mom is Italian and makes something similar but she adds an egg. I never used Korean pancake mix will look for it. Mom made smaller ones, like silver dollar pancakes. Looks great.

Hi 👋 No, as noted in the video, I do not squeeze the zucchini. I prefer not to, to keep the zucchini shape and crunchiness. Some people squeeze them, but I think doing so makes them mushy.
