    I am trying to create a chocolate lava ice cream, so I'm looking for a syrup or sauce recipe that will stay liquid in frozen ice cream. This recipe comes closest so far. When I made it, the sauce turned into a taffy-like consistency at room temperature, but remained the same even when in sub-zero temperatures. It was softer than the ice cream, even at 6 °F. I'd like the sauce to be a little thinner, but the current version works OK, too.

    These videos bring me immense joy. I'm not even kidding, I just love sitting down and watching Chef John's videos. Maybe it's because I, personally, can't cook. Watching someone make a delicious meal out of just a few ingredients always brings a smile to my face. Especially Chef John, who so enjoys cooking. I also love that he always sounds so darn cheery :) it makes me happy.

      Can I use water instead of milk and follow the recipe ?

    • @juddperkins4306
      @juddperkins4306 9 років тому

      Tehrim Idris water will not produce the same product as milk because water does not have fat, lactose and lecithin in it to help with emulsifying the ingredients. It will be a runny unincorporated mixture that never comes together correctly. If you are gonna make a chocolate sauce, you might as well use milk unless you can't because of allergies. Maybe Lactose free milk will work but I highly doubt it.

  • @TheAnimePiper
    @TheAnimePiper 10 років тому +2

    This recipe came out great! Though, the time for me was off. I did do the 6 minutes but it came out too thick, more like the consistency of peanut butter so I had to thin it with 2 tbs of milk. So if I were to use this recipe again, I'd pull it of at 4 minutes or so.

      You could probably use water but the taste might be off. Maybe cut the recipe in half and try it to see how it comes out. Or maybe you could use almond milk as I've read people have used that.

    Hey Chef John! Hi! I made it an hour ago-but I cheated!!!! I actually added two more tablespoons of butter and 1/4 cup Ghiradelli 60 % cacao cho chips to it once I took it off the stove top. Love the taste but a bit too thick & clumpy. I want that certain taste with the perfect viscosity. Hard. Any suggestions for that added richness? Thanks.

    I think, after I watched this video, that if someone doesn't like Chef John and all his humorous well-meaning and well executed cooking, then they probably scam little old ladies out of their pension or something nefarious like that.
    You just don't want to hang out with someone who doesn't like Chef John, it'd be like dating someone who hates your dog. Just isn't right.

    "I disliked this video because:

    3. No one else disliked it so I felt like I had to balance it out
    4. I'm spiteful of everything and everyone
    5. Some people just want to watch the world burn (or make chocolate seize)"

    That looks like the start of a "No bake cookie" I make. I make the chocolate sauce in the microwave with the butter, milk, sugar, and cocoa. Then add the vanilla, coconut, and oatmeal, and just portion them out on wax paper and let cool. I'll bet the proportions of butter, milk, sugar, and cocoa will be different though.
