I first got into cubing around 2012 - 2013 and back then there was nothing, just the cubes and lube and sometimes spring adjustments. That was it. Now imagine my surprise coming back to the hobby last year and hearing about magnets and how they went from just beind in the corners and edges and just making the cube be in it's perfect shape to being in the corners and helping turning to literally replacing the springs. It was mind blowing.
UV coating is a sort of polish that is cured with UV light. This is somewhat similar to UV cured nail polish, but it is coated way thinner and more precise and is more durable. This indeed because of its extreme smoothness and its plastic like properties, is more grippy :) (correct me if I'm wrong!) The cost of UV coating comes mainly because this stuff is made synthetically and applying is not an easy procedure. People have tried using the UV cured nail polish as an alternative, DIY version, but the application has more bubbles and is way less uneven, and can even make the cube slower if it accidentally also coats a little bit of the sides of the cubees. It is also less durable so It might come off after some use.

I was big into cubing about 4 years ago and have been casually solving cubes without getting into the community much at all since I was first in it. The innovations made in speed cubing are crazy, I can't wait to see what next happens!
I remember going to a comp and meeting Chris Tran and trying some of the first magnetic cubes... had no idea his magnetization idea would lead to such advancements. He's done a lot for cubing and had many other projects die out... like a op dayan 2x2 plastic coating that mimicked the feel of the 2x2. Truly fascinating stuff.

The TengYun V2 actually has a more convenient Magnet Adjustment System. It's only issue is that the carousel is holding several magnets with different strengths rather than just one or two.
I learned how to solve the cube back in 2015, back then, the DaYan Zanchi and MoYu Aolong were all the rage. I kept solving the cube but kind of lost track of the cubing world. Just yesterday I started looking at the new cube tech and I am blown away, it's like I was frozen in carbonite for 100 years and woke up to a completely new world. Now I'm overwhelmed and I don't know what cube I should get jaja

If the spring itself doesn't change (in length or amount of coils), going from more extended to more compressed doesn't make it 'stronger'. It'll be just as strong if compressed the same distance as the one already compressed that same distance. I'd also say traditional springs have the issue of wearing out and losing their strength over time. Magnets don't have this issue.
