    Here's what I used to make my Haitian Spice:
    6 Leaks
    1 pack of parsley
    2 head of garlic
    2 bell pepper
    fresh thyme
    1 1/2 TBSP of salt
    2 TBSP of black pepper
    2 TBSP of whole cloves
    3 Maggie cubes ( 3 large chicken bouillons)
    1/2 cup of olive oil
    1/2 cup of water
    Blend all together VOILA

    Fun fact, this spice is completely vegetable and natural seasoning based! So it’s super safe to use!

    I usually dont comment on you tube but your videos are amazing! Very simple to follow. I'll try your spice that I just made for the first time with my dishes.     it looks delicious ! do you know Maggie cubes contain msg mosodium glutamate. it gives me headaches and I was told it's very bad for you. with all those lovely seasoning you add have tried cooking without it?

      I think we can use other chicken bouillon cubes. I use an organic one without sodium.

    My new favorite youtube cooking channel! I know how to cook a lot of Haitian food because my manman did not play with me on Saturday mornings lol, but there are some things I didn't learn too because I was trying to be American. Unfortunately diabetes caused my maman to be blind and she stopped cooking. Thanks you can I pass on many of our recipes to my daughter and what's awesome is you have actual measurements. Sorry if I am fangirling!

    I’m excited I found your channel, I’m a reg white girl but love all cuisine. Especially spicy.. Saw your Haitian spaghetti and I was drooling. So smart the epis all those veggies and spice together in a paste type , in a jar? Who knew? lol I’d like to add cilantro??

    Never added cloves to mine....heres a friendly tip I strain mines and put the water in a bottle to save for my soup broths and rice and save the (Ma) left over chucks (forgot the english word for it) ..for sautee'ing ?? (-_-) my beans, etc. looks good mama

    Great video...I never knew leeks could be used in a seasoning so thanks for that...I notice you didnt use an acid . eg lemon or lime does that mean the colour will change over time? No problem....love the video and thanks for the teaching.

    I will make it with garlic, clove, black pepper, scallion,persil+persil, but absolutely no bell and habanero peppers or Maggi by doing so I will keep it as true haitian mix.

    I know this is an older video, but could you please tell me the type/brand of blender you use? I just tried to make the epis, but my blender won't even budge unless I cut the leaks SUPER tiny. Thank you!

      I no longer have that blender. I’m currently using a Hamilton brand blender and I love it. I have to say I start with the chop option then purée. Thank you for watching!

    question about epis. I was told that adding water will make it spoil faster to only use oil to preserve it? help

      I add water to mine and I've never had an issue, but my aunt only adds oil to hers. Its totally your own preference. I do freeze most of it though...Thank you so much for watching and commenting!

      MoeMoe you sound really stupid. Where is it written that YOUR WAY is the "real Haitian way" as opposed to the "Haitian American way???" There's no REAL, WRONG, or RIGHT way to cook a recipe. You make it your own. Please, for the sake of not embarrassing yourself in the future, learn to actually THINK before posting. It's obvious your brain needs a good workout....🤦🏾‍♀️

    this really looks very good and I also heard you say that you can add other things to it I love spicy and my children do too so I think I would also put in a couple of Scotch bonnet peppers and maybe some cilantro and also I'm asking you if you do not freeze all of it how long will it last in refrigerator because I want to know how much I should stay in the refrigerator without it going bad thank you so much

      +anita lawson Hi Anita, I usually keep enough in the fridge to last me about 3 weeks, some people might even keep it in the fridge for a longer period. Yes you can definitely add scotch bonnet peppers to it, or any other spices. I have little kids that's why I didn't add any hot peppers. happy spice making :)

      you could try. I've never added vinegar of lime because I don't want my rice to have the acid taste. I use this seasoning in my rice and beans as well

    How long is it good till it spoils ? And how long will freezing it make it last ?

      It should last a month or so in the freezer. I have some that I've been using for about 3 weeks in my fridge

    I saw that you had 3 leeks and 3 garlics in your hand but your recipe calls for 6 leeks and 2 garlics. Do I stick to the recipe list?

      Sorry if I confused you! whatever I have listed in the description box is the exact amount I used. I blended some off camera as well....didn't want to bored you cause with the blending process. I just listed how much I used, but you can definitely use more or less. Thank you!

    I am a lover of good home cooked food that is prepared from natural raw ingredients. I am of West Indian (Vincentian and Grenadian) parentage and have been making a conscious effort to omit as much additives from my meals as possible.
    I love your home made seasoning which is very similar to what we (my family) make using the food processor (that way we are not compelled to adding the water).

    THAT was a lot of Black Pepper, hahaha! I thought you were gonna make all of that. You should try using ice cube trays and fill them up with your spice, freeze them and use as needed. Just an idea...

    I tried to search for chicken maggi cubes online but the wrappers do not look the same. I found a brand on ebay called El Criollito Maggi/Bouillon Cubes and it is the exact size and shape as what you are using in your video even though the wrapper does not say maggi. is Maggie cubes just a generic name that you call this type of bouillon Cube?

      You can use as many as you'd like. 5 bunch of the green onions should give you plenty of epis. Thank you for watching!

      Exactly, we don't dump that entire thing into one recipe LOL. If you're cooking with it you're only using TSP or TBSP. Most don't add salt at all to epis because they want to control the salt in their dish themselves, just an idea.

      I freeze the Epis in ice cube trays (large and small). They make soups and stews taste absolutely wonderful. I also use Epis to marinate meat adding other ingredients like olive oil, vinegar, sugar

    I see the ingredients say 6 leeks but the video only shows 3. I just wanted to confirmed.

      A container or glass jar. An old peanut butter container or plastic Chinese soup container will do fine as well.
