Hey Wrath. That giant Little Mac you were asking about is Giga Mac. It’s a feature of Punch Out Wii’s multiplayer.

The split screen thing in Mac’s segment is indeed 2-player mode from the Wii game. If you counter-punch your enemy when they turn blue then you can turn into Giga Mac (who isn’t really canon since you can’t turn into him in single player- hence why Bumbles didn’t mention him) Giga Mac’s only other appearance is as Mac’s Final Smash in Smash Bros.
Which is also non-canon, but is a fun crossover series.

The ref has an infraction too. He gives the boxers an easier chance to get up by pausing the count as they attempt to get up but keeps counting when Mac tries to get up.

Also, the boxer that Bumbles McFumbles skipped was Aran Ryan, the Irish rep for Punch Out, and also one of the biggest cheaters the ring has ever seen! We're talking elbow attacks to our cranium, using the platform to charge at us, and also bringing a makeshift weapon in his Title Defense match! And these are only a few of the infractions, another is that during an intermission, he socks the ref! XD

Fun bit of trivia. The earliest days of boxing did allow something like tag team boxing. But this was back when rounds lasted until a down happened, and the count was to 30.

That's Giga Mac, a form Little Mac can obtain only in the Head-to-Head mode (which is basically a PvP mode) when he has enough "Giga Mac Juice", which can be earned by punching the other player at certain times.

I recommend reacting Punch Out!! TF2 Dub, where each fight is their own videos. I'd recommend you watch them in 3 circuits of the fighters (or find the Playlist of this).
1st circuit - Glass Joe, Von Kaiser, Disco Kid and King Hippo.
2nd circuit - Piston Hondo, Bear Hugger, Great Tiger and Don Flamingo.
3rd circuit - Aaron Ryan, Soda Popenski, Bald Bull, Super Macho Man and Mr. Sandman.
There's also the title defense versions of those so you might want to check those out aswell.
And the title defense mode allows you to possibly face off against a secret boxer
