  • It is another day for comfort food. Manicotti is a favorite of mine and can be made with pasta squares like you find in my recipe lidiasitaly.com/recipes/manic.... You can also prepare manicotti with crepes like I do here. In fact, while you are at it, make some sweet versions of those crepes so you have an easy go-to dessert tonight too!

    Brings back memories in the kitchen 45 years ago. My cicilian mom and grandma would make the manicotta 1 a month.

      Awh... I know... time just goes by so fast, too fast. I know how you feel. My Grandma took care of me every Summer Vacations I had all Summer long.
      I miss her so damned much. Those was "the good old days", then one day she took me to her old grocery store, all wooden floors,... so darn nice...
      And Grandma was always makin her Goulash or her Meatloaf, or Homemade Sauerkraut & her slow fried Chicken🍗🍗🍗🍗 was so good, & if you ate too much & got stuffed you missed out on her homemade Strawberry Shortcakes 🍮with them fresh hand picked Strawberries🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓🍓 sliced & glazed in her C&H Sugar, with Milk 🍶🥛poured over the top & you never wanted to miss out on a that.
      Including fresh cut Watermelons🍉🍉🍉🍉 from the garden & Pepsi shook up & sprayed all over their Ceiling while Grandpa says "Alright who did this"? Whats the big idea kids? No one told on the other kids no they stood their laughing until the Watermelon pieces come down in big chunks one at a time on Grandpas balled head, & who gets the blame? Why I did, a hell of an predicament, ... grounded for the rest of the Summer... but quickly forgivin, & taken to Disney World when they first opened, & was asked by Walt Disney himself to be in his Movies. What a hell of a year.

    The first cannelloni recipe I used had crespelle for the wrapping. I much prefer them to something doughier. Haven't made it in years, so thanks for the recipe!

    Oh Lidia-I love your shows so much. I saw you make these before and I definitely want to make this year for the holidays. I cook for my family every night and each thing I make reminds me of my mother and grandmothers and many aunts. I grew up in a big Italian family but moved away about 20 years ago. I still invite friends over and do big Italian Sunday dinners where we sit around the table 5 or 6 hours...I love it! I’ve learned so many good recipes from watching you. And my favorite Christmas special of all time is the show you did where you invited different celebrities to tell their stories and share a holiday meal. I hope you realize how much you give to others! 💕

    I make my manicotti shells a similar way..1 egg, 1 cup water, 1 cup flour, 1 tbsp olive oil. If too thick, add a little more water. If you like, you can use half cup milk, half cup water, grate of nutmeg in replacement of 1 cup water.

    I will try and make this with sautéed mushrooms and leaks on the inside and top with a little sauce and cheese. So light and yummy. 👍

    I made this tonight! I'd never had crespelle before but it worked well! I liked it much better than pasta in manicotti. Much better texture. We each found that one was plenty for each person but I wanted to eat more cuz it was so good! Lol. I used a heartier sauce (jarred pasta sauce that I added Italian sausage, wine, onion, garlic, a little sugar, and carrot to) but otherwise didn't change anything. Will definitely be making this again. Thank you Ms. Lidia!

    I’ve done these for decades and use them for manicotti-more delizioso than pasta! I recommend getting a real crepe pan though. Also use wax or parchment paper to separate the crepes don’t pile them on top without…

    I think I would add cilantro as my herb, I’ve never cared for parsley. I don’t know why. 🤷🏻‍♀️ I also think finely diced green onion or chopped spinach maybe? Swiss chard?

      I’ve made crepes all my life from age 10 with my mom. It was a poor mans meal, when we had nothing to eat. It’s milk, eggs, flour and a dash of salt. Garnish is lemon juice and sugar.
      Two whole eggs
      One cup of whole milk
      3/4 cup of flour
      1/2 tsp salt
      Mix well. Best until bubble appear. If too thin add more flour, too thick add more milk.
      The consistency should be a bit thicker than heavy cream.
      Let stand in fridge for about 30 minutes.
      In a crepe pan, get it hot and do a quick skim with lard. (Lard doesn’t burn or add color to the crepe)
      Pour enough into the pan swirling the pan just off the heat to cover the full pan....not too much batter or they’ll be too thick.
      7-8 seconds then flip
      5-6 seconds on that side and remove from pan.....place on a dish
      Repeat....a light coating of lard before each crepe
      We would roll them and sprinkle sugar and lemon juice on them.
      I’m 72 and I still make them occasionally. You can fill them with anything to like to eat. Bacon, strawberries, etc.
      my kids liked turkey in them with turkey gravy over them.
      There’s a bit of skill needed to get them thin. I can get them thin enough to hold and see through them. They’re cheap and good.

      @@mchapman132 I've only had (until yesterday) crepes once from IHOP. I wasnt that impressed so I never had them again. I should have known the homemade version would be a million times better haha! They are so delicate but so good. Thanks for your recipe and the filling ideas because I will definitely be making yours or hers much more now (I don't have milk on hand very often)

    Hi chef.. can this be made into several trays and frozen and be ok for a few months frozen? One tray for dinner an one for another day? Can fresh cooked well drained chopped spinach be added ? Isn’t it Florentine with spinach. Thank you I just really enjoy your recipes and have made several. 🙏

      Hi Jade! Certainly, this can be frozen. Just make sure that it is tightly wrapped in plastic wrap before freezing, and fresh, well-drained spinach is always a better choice... alla Fiorentina

    I can’t eat tomato, so what other kind of sauce could I use in replacement? I’m not a very experienced cook lol. I love alfredo sauce, would that be an ok substitute?
