The bread is the key ingredient in the French dip sandwich. It was typically made with two-day-old bread, and the jou was to make it soft enough to eat. If you have a softer bread they have a tendency to fall apart. Toasting the bread helps. I am glad you enjoyed the sandwich.
That's been my issue with Italian beef - places that make it with soft bread.

I'm from Michigan but, the French dip is my favourite Sandwich in the world. Try the same recipe with thin sliced rib steak and the addition of caramelized onions. A restaurant near me serves it that way and it is fantastic.

Heck yeah! One of my favorite sandwiches of all time. Atlanta is seriously growing her cooking skills with each new state. I'm usually not a fan of soggy bread, but when it's toasted, then dipped and immediately eaten, it's not soggy, just juicy!
I didn't even know the french dip was my state food, it is my go to when I eat out, I'm so glad you all loved it

Philippe's French Dip is STILL in the same downtown LA location and it is Iconic- and super delicious.Lots of people have worked there for 30-40+ years.Drsserts are also to die for.Highly recommended for a visit during ur visit.

Philippe's opened in 1908 and is I believe the oldest continuously running restaurant in California. Anytime I find myself anywhere near downtown Los Angeles, I'm eating there or taking out. My Dad remembered when he was a little kid in the 1920's and the sandwiches were 15 cents each. I remember them when they were $1.25. Today they are like $9.00 each, and they are still worth every penny! When you are in L.A. you HAVE to go there, and being from NZ (the sheep capitol of the world) you should know that besides the beef version, they are also super famous for their lamb version, which is carved off the bone right in front of you, and is to die for! Especially when it's coupled with their homemade mustard, which I'll warn you is the hottest mustard known to man so use it sparingly! Check them out on UA-cam, there are some good videos. BTW... Love you guys! Been watching since your very first family video showed up in my recommends!
My father worked in Los Angeles when I was a kid. He took me to Philippe’s for the first time when I was just a bit younger than Denzel.

I love French dips. I've had some good and bad ones. Prime rib French dips are my favorite. Arby's French dip is good for fast food.

The Arby's French dip is good depending on the location. Had a really tasty one on a road trip and coming back had one in another location which was mediocre.

I second this! Anytime we're near LA, we make a stop there! While I don't eat beef, I LOVE their chicken french dip and I always get their pickled eggs and mac salad!

Not even close. Tadich Grill is San Francisco has been running since 1849. It was nearly 60 years old when Philippe's opened. We have no shortage of 19th century restaurants here in California.

Nope. Philippe's may be the oldest continuously open restaurant in the city of Los Angeles. But San Francisco's Tadich Grill the oldest restaurant in California, which originally started as a coffee stand on San Francisco's "Long Pier" in 1849 that also served cooked seafood. In fact, the Tadich Grill is the third oldest contiually operating in the US, beind only Boston’s Union Oyster House (1826) and New Orleans’ Antoine’s Restaurant (1840).
Great job. I do french dip the lazy way. I put a chuck roast in a crockpot with a can or two of beef Consume and a can or two of french onion soup. Cook it till it is fall apart. I shread up the meat. I cut my sub rolls and put them in the oven to just get a little hard. Then load them up with the meat and provalone cheese and put back in the oven till the cheese is melted.
Mine are pretty similar. Crock pot, roast, packet of dry Au Jus mix, packet of onion soup mix, salt, pepper, and water. Cook it down, toss it on a french roll, and heat up the juice until it thickens just a bit.
Yum.
OH, this is interesting, I was born and raised in California and did not know THAT THE STATE FOOD WAS A French Dip. Funny thing I never heard of it until I moved to the east coast and tried one.

Yum! Love French dips. Next time you make it, broil the open rolls a little after you butter them. Then add the beef and cheese and broil again to melt the cheese.

The state flower of CA is the Golden Poppy. We have not only beaches, but mountains and deserts too. The Pacific Crest Trail begins at the US/Mexico border in Campo, California and runs up all through all of CA, OR, and WA states and ends at the Washington/Canadian border. It is the longest trail in the US of 2,653 miles or 4,270 km in length. If you like to hike, you should try some day hikes along this scenic trail that are parts of other smaller trails.
There is something about that Southern California weather! And along up the coast to Northern California..it just gives you this refreshing feeling!

My family makes French Dip about once a week! My husband has perfected it by adding herbs (parsley, sage, thyme, taragon) to the au jus and adding caramelized onions to the sandwich.
I have watched so many of your 50 state food vids and let me tell you, you put out restaurant quality food every single time. I haven't seen any that I would be disappointed in if served at the finest restaurant. You could open a place and let people there experience these foods just the way you have. The states has so many places that we can try pretty much anything from anywhere.
I’m a native Californian and I’ve never heard that our state food is a French dip! 😂 They were big in the 70’s and I definitely ate my fair share as a child!
Northern Californian here. I never heard of the French dip being the state food either. When Atlanta started this series, I asked myself "What IS California's state food?" When I googled it, it said almonds, and I thought that couldn't be right.

I believe their audience suggests foods that they feel represent their state. They ate Sonoran hot dogs, to represent Arizona (my state), which is better than nothing, as we don't currently have an official state food. Apparently people have petitioned to have Chimichangas named our state food, which unlike Sonoran hot dogs, did originate in the state.
(Both sides of my family are multi generation Californians, and I spent a lot of time there, growing up, and lived there for a couple years. I still think it's funny that your government decided to name 4 varieties of nuts as the official food. I like French Dips much more... especially considering I can only eat almonds, without having a reaction, but that wasn't always the case. I miss pistachios.)
My family ate them every other Monday, not my origin family,but my kids and I between 2000 and 2010. It is super to make in a slow cooker , our Mondays were busy, and it was so lovely to come home to delicious beef waiting Togo into a French roll. I never had them as a child.

We have a restaurant in SW WA that uses prime rib as the meat. I would add grilled onions also. ❤️🇺🇸🎉
That's approximately what I'm used to seeing in San Francisco and the East Bay, where the normal place to get a French dip is at a hofbrau, or a bar/beer hall with a hofbrau as the food service. It's not always listed as a separate item, but every Bay Area hofbrau has a hotel pan full of hot beef jus; you can get pretty much any sandwich you want (turkey, ham, tongue, lamb sometimes) dipped in it if you ask. The beef is always sliced off a roast (rib sometimes, but I think they're usually sirloin); in addition to the jus, the normal condiments are hot mustard and horseradish. So they're basically wet roast beef sandwiches on hard rolls.
Onions (raw or grilled) are sometimes offered. What I've never seen offered, or ever heard of before this video, is melted cheese. Whuh? It's not an Italian beef. If you're going to interrupt the clear statement provided by beef on a hard sourdough roll dipped in broth, you might as well go full Chicago/Philadelphia and put grilled peppers on along with the cheese.
Tommy's Joynt on Van Ness in San Francisco would be my go-to for French dip these days. Sammich, coleslaw, and a beer off the 180-beer bar list. For all you recommenders of Arby's: There are three Arby's on the edges of the Bay Area; the closest one to San Francisco is 50 miles away. Arby's is not a presence here, although they have a ton of TV commercials.
And just to clarify California is the most populous state. 3rd largest in land area (behind Alaska and Texas). Love your videos!!

I'd have toasted the bread first if you're gonna butter it lol We (my family) make ours by putting the meat in the au jus sauce to heat it and give it more flavor. We put mayo on our rolls, sliced onion and sliced swiss cheese. It's a little messy but it tastes yum! This is also known as a French Dip. Now I wanna make it again lol Thanks! Hi from California!

If you like a French dip then you’ll love an Italian beef sandwich! Had them in Chicago and Pittsburgh and I loved them. Never had one before since I live in the western part of the US.
I love a good French dip sandwich! I always end up drinking the au jus as a broth soup to finish the meal. Great job, Atlanta! This sandwich pairs great with potatoes chips, cheese fries, or Mac n cheese for a side dish. ❤❤❤👍👍

I'll give you one--I fell in love with asparagus sandwiches when I had one in the airport in Christchurch, NZ: Real simple; just steamed or boiled asparagus and cream cheese on bread (or toast). Never had such a thing before in the US although it's such a simple idea I bet somewhere over here somebody eats them. Otherwise I lived in Christchurch for several months and didn't really encounter anything that seemed terribly exotic but I'm from the Bay Area in California and we get a lot of the same Asian immigrant influences that NZ does. One unique thing I doubt anyone does at home even in NZ would be the native Maori Hangi which is basically a pit BBQ (dig a pit; line with stones; build a fire to heat the rocks; when the fire dies down add meats such as lamb, pork, chicken and seafood (kaimoana), and vegetables such as potato, kūmara (sweet potato), yams (oca), pumpkin, squash, taro and cabbage; cover with earth and leave for several hours (at least). I worked with some NZ Maori military personnel and they threw one of these events that I attended.
Seeing the leafless trees through the window was amazing, it really is winter down there! Mid summer in the Pacific North West!

In California now but the first time I tasted a French Dip sandwich was when I lived in Oregon, and they are still my favorite. Wishing you all safe travels to the USA. Hope you get to see lots of amazing things. At 67 I have seen almost every single state, but I still highly recommend taking the Grand Canyon Railway from Williams Arizona to the southern edge of the canyon. If you get to do that watch for the original telegraph poles along the way and the train robbers riding horses outside of the train. Great fun for the whole family. Hope you get to do that. And you absolutely must drive up Hwy 1 up the Big Sur coastline. The drive is stunning. Hearst Castle is nearby too and a fun tour to take. My mother lived near there as a child and remembered being envious of how elaborate the Hearst Children's birthday parties were, dad even brought in wild animals. Be sure and stop to see the huge sea lions on the coast. There are several points to see them, but we loved the beach at San Simeon. In Northern California the Redwoods are something to see. Absolutely massive trees and there used to be (I think it is still there) a cute point of interest featuring a giant Paul Bunyon called The Trees of Mystery in Klamath, Oregon. The Oregon coast is also beautiful and when the tide is out at Cannon Beach Oregon the tide pools have so much life in them it's lots of fun. If you are going to see Indian Ruins Mesa Verde National Park is hard to beat. In northern Colorado the Big Thompson canyon up to Estes Park is a fun trip. The Stanley Hotel offers lots of interesting history and is supposedly haunted although I never encountered anything. There is also a tram that takes you to the top of a ridge where the view is incredible and there is a gift shop and snack bar up there. And be on the lookout for Elk and the big horn sheep hopping from rock to rock on the side of the mountain. If you come in September, you can also hear the elk bugle. Anyway, have lots of fun.

I am a native Californian, who has lived here for all, but six years of my life, and I am embarrassed to say that I have never eaten a French dip! Here’s the thing… I never ordered it because it looked DRY!!! I am very fussy about my sandwiches and I like to have lots of sauces on them because I have a dry mouth. I feel really foolish right now!

I love french dip. I make my roast in my slow cooker. I brown it first and deglaze my cast iron pan. I put sliced onion in the bottom of the pot, then the roast, lots of minced garlic. I salt and pepper the roast before browning. Add the liquid from your deglazed pan, a bit of beef bullion. I use one we get here called better than beef bullion. Slow cook until the chuck roast is fall apart tender, about 6 to 8 hours on low. You can use the juice in the pot for dip.

In LA two places claim to have invested the French dip sandwich, Philippe’s and Coles! They are maybe 6 miles away.
Both roast large pierces of beef- Philippe’s uses bottom round, Coles used ribeye, the uses the pans to make the au jus!
🙌 right. On! As a Californian I do like a frinch dip. Very tasty. I’m born and raised in Northern California about 1.25 hours from north from Sacramento. We are a huge state. Think about it divided into three sections. North,central and south. Us in the north are more into snow boring and mouton biking. I’m about two hours east from the ocean. So no surfing 🏄♀️. However we love to go to the beach.

another way to do the bread which I love the most is to butter the bread and fry it until crisp and brown before putting on the meat. It gives it a nice crunch even after dipping. One of my favorite sandwiches.

This is a firehouse favorite. Once you sear the meat, you can then cook them in the au jus, so it soaks up the juice and flavor. Then make the sandwiches & chz melts, as you did. Then dip & enjoy.
Philippe is still in DTLA (downtown la), the original beef dip! Always packed at lunch time. Enjoy when you get here on your families journey.

This is a favourite of our family.
We do a slow beef potroast, or oven roasted beef for our French Dips though so it has really intense, beefy flavour, and we use the au jus from it cooking to make more dip for the family.

In case you pass by LA in your trip to US, I recommend Philippe’s the original, one of the best restaurants in LA , birthplace of the french dip sandwich, my favorite the Lamb french dip. Located between the Union Station and China town.
It's pronounce "War - Chester - Shire - Sauce" or you can say "War - Chesh-a - Sire - Sauce" or more commonly at my house "Wort - Shiner" Sauce.

When we did it was often something like McDonald’s, Taco Bell, A&W , or if it was special, the Sizzler Steak House. At that time it was a kind of fast food-sit down restaurant combination. You ordered at a counter but then sat down at the tables. They would give you a number and call it out as your meal was ready. They had steaks and hamburgers and I’m sure there was more but Mom got a steak and us kids got burgers. Later it became a more sit down place. You still ordered at the counter but then you were given a numbered plaque to put on your table and they would bring your meal out to you. The menu had expanded too and added more dishes to choose from. Needless to say this was a long time ago and going out to eat was a very special occasion. I miss the California we had back then and don’t like what it has become. Life was simpler and not so crowded back then. Now I live in a rural area in Montana and couldn’t be happier.
I just made French Dips last night. I lightly toast my rolls then put the beef & cheese on. Then I quickly broil to melt the cheese. Cut sandwiches in half on the bias for easy dunking in the au jus.
I live in Southern California and had no idea that sandwich was created here. Not something I would try myself but glad you enjoyed it. My husband had a beef dip at our lunch date today here in southern California. But the place we go usuallu serve them with the beef only, occasionally cheese and/or onions. You made my mouth water!

California girl here… Cali is called the golden state because of the state flower, the California poppy. When they are in bloom on the hillsides, it looks like the hills are golden from a distance.

If you like french dip, look up Italian beef. The beef is basically shaved, and instead of searing it in a frying pan, you cook it in the au jus. It's a Chicago thing.
I get mine from Portillo's "dipped". They quickly dip the whole sandwich in the jus and put mozzarella and peppers on top.

The sun isn’t always shining to the contrary there are mountain ranges in California like the Sierra Nevada mountains and Cascades .They get lots of snow and the north coast which is a temperate rain forest with the Redwoods and get lots of rain.

I love a French Dip. And Sam, if you like soaked sandwiches, you should try the French Dip’s cousin: a Chicago-style Italian Beef sandwich. My personal favorite is Al’s Beef. You can ask for “wet,” with the meat coming straight from the “gravy” (more like au jus than the gravy you’re thinking of) so the liquid drips/soaks into the roll. Or best of all, get it “dipped” - that is, the entire sandwich is secured by tongs, then completely submerged in the gravy and allowed to absorb liquid for a few seconds. Which is why you need the perfect hard/soft balance of the bread. And then top it with some giardiniera… My mouth is watering just thinking about it.
This is one of our families favourite treat dinner, we just call it "Au Jus" some call it 'French Dip', thin sliced roast beef (Cold Cuts) on a french roll and rich beef broth as the dip. There is a debate between Philip's and Cole's restaurant established in 1908, on who first invented the French beef dip sandwich. Cole's is just two streets up Main Street from my place in downtown. And it tastes great. ✌️

The Silver State doesn't have an official state food, but shrimp cocktail, which originated in Las Vegas in 1959, should be a contender. Where else would you find seafood and sauce served in a glass

French Dip is one of my favorite sandwiches and was long before we moved up to the northeast corner of California. Even as I now live in Pittsburgh Pennsylvania I still love it.
Most people when they think of California think of the the large coastal cities and don’t even think of thousands of small communities that are scattered all through the Sierra Nevada mountains, the Cascade mountain range in the north or even the coastal range north of the San Francisco Bay Area and even south of the Bay Area.
A little trivia fact for you. Reno Nevada is further west than Las Angeles or San Diego are.
I think she is doing fantastic. As an American whose daughter and family has lived in New Zealand for almost 13 years I just wanted to let you all know what I learned on my first visit. New Zealand’s butchers do not do the same cuts of meat our butchers do. She is doing amazing.
In Chicago when I was a child in the 1960's and 1970's I used to see French Dip sandwiches on restaurant menus, in the 1980's French Dip disappeared and Italian Beef took over, Italian Beef is basically a French Dip sandwich with Basil, Oregano and Garlic added to the Au Jus gravy and the sliced roasted meat is simmered low and slow in the Au Jus gravy.
The Au Jus soaked bread is what makes both French Dip and Italian Beef great sandwiches.

That restaurant, Philips, is just a few blocks from Union Station in Los Angeles. You have a choice of beef, pork, or lamb, and if you order it "Double Dipped" they dip one side of the roll before they serve it. Messy bit soooo good. There are some booths for seating, but most of the seating is at big long tables where you sit with different people. They have owned the building for a very long time so their prices stayed low for a very long time. You could get a bowl of oatmeal (not the instant package kind) and a cup of coffee for under $1.We would take the train up to LA, walk up the hill to China Town for breakfast, and to check out the shops, and then down to Philipes for lunch, then maybe down to Pershing Square and the Farmers Market. Always a good day.
