    This is the best kalbi recipe!!! It’s like the fancy kalbi you’d have in Korea!!! I’ve always made it with a sweet sauce!!! But this is way better!!! It’s still sweet but flavor is a lot more sophisticated!!! Thank you!!! You are amazing!!!

      Thank you Jackie🙏. Yes, the sweetness of the marinade should be subtle. (Although more and more Korean restaurants in the US are making it sweeter to cater to non-Korean clientele🙁).     I tried your marinade recipe tonight for the Kalbi and it was PERFECT ! I did however dunk the beef in the marinade second time coz after an hour the meat still looked a bit pale... You are right in saying not to let the meat sits in the marinade. Thank you for your very informative video - it goes to show you are really from a professional restaurant background.     Gamsahabnida, hope I spelled that right. I spent a year in Waegwan just Noth of Deagu. I absolutely fell in love with the people, their culture and their food. So much so that I even tried the gaegogi after given a brief history of it. Wasn't bad, but I much more prefer the bulgogi lol. I hope to one day return and share the experience with my children. Until then I'll just have to share the taste. Again, thank you for sharing your recipe. Manh-eun chugbog

    This is the 4th video I have watched about Kalbi Ribs. Helen has thrown in alot of info that was not on the others. Her Kalbi cuts are THICK! The LA cut is all we got here. I'm showing this video to the Korean Store down the street. I wonder if that makes a difference... also, Asian Pears do not exist in Sarasota, Florida. I would have to drive to Miami to get one, I don't think Tampa has them. What is the best alternative?? Very good video. (I just cooked kalbi in my rice cooker with rice, after I par cooked the ribs on the stove, I made an au jus with the ribs, used that to cook the rice. So boston lettuce leaf, broth infused Korean rice, beef entire minus bone, Korean Miso on top. Maybe just a pop! of sea salt or seaweed on top. Done. I'm thinking of the riffs you could play on this Melody. Peppers, different grades of beef, shallots, endives, radish, etc. This is a straight up awesome video.

      Great questions!
      YES, please show this video to the butcher at ur local Korean grocery store or at ur favorite butcher shop. In general, ‘LA Cut Kalbi’ is more popular because of its price point. The actual rib part that is used to cut ‘LA Cut Kalbi’ has less meat on the rib bone compared to the part of the rib where there is a thick cushion of meat on the bone, used for the restaurant-style cut Kalbi. I personally buy more of the ‘LA Cut Kalbi’ because of its price point since I have three hungry boys to feed🤪. The meat on the LA Kalbi Cut is bit ‘chewier’ in taste compared to this thick cushioned meat on the rib. Personally, I buy the thick meat cushioned Kalbi for special occasions, to make the long strip of beef cut which is a presentable-treat when I’m hosting guests😉
      As for the Korean pear, occasionally, Costco carries them. Otherwise, u can use Bosc 🍐 instead.

Ain't nothing worse than getting your grill on, and dropping the ball. I ain't even gonna look at that white kimchi video. My peeps love heat. Would you please write in Hangul & English script, the cuts you are talking about, so that I can cut and paste them, and show them to the Owner of the Store, so that she/he understands what I am trying to find, wherever I go. If I jump in my car, and drive to Gainesville, Florida for a game, and I don't know anyone there, I'd like to find a Korean Store there and be able to go in, and show them the Hangul or English print out, and they would know exactly what I am looking for, and sell me about 100 lbs of it!lol I go to Oriental Foods & Gifts, on Gulf Gate Drive, in Sarasota, Florida. 4 months ago, I went in, nearly purchased everything in the store. Dude in there, straight BOSS. He knew exactly what I wanted, most helpful, this dude was awesome. If I move to Alaska, I'm gonna call this store up for shipping. It was that cool. At this point, I'm putting you at the top of my list for cooking meat. I swear, if you made a few videos on Tailgate Grilling (prepping, cooking) you would have MILLIONS of TAILGATE cookers downloading your videos.       Show the Korean store owner the thumbnail picture of this video. Tell him that u want to buy Galbi Jjim (갈비찜) beef short ribs. (Galbi Jjim - stewed beef - is another dish I will do later but this is the cut of meat used.) FYI - These beef short ribs do not come precut into long strips.

    I marinated for just 2 hours, but it was soo chewy still. I used pear juice. How did yours tenderize so fast? Flavor was delicious.

      Hi👋. Hmm…it could be the cut of the beef? Some sections of the beef rib can be super tender and another section can be pretty chewy (more $, more tender). Try soaking in the marinade 2x longer next time. When u say pear juice, do u mean those canned pear drinks or freshly juiced pear? I only use freshly grated pear. Those canned pear drinks r mostly sugar water. Also, not sure if cooked the galbi well done or not. Trying adjusting cooking next time, too. Thanks again for cooking with me🙏

    thanks for the vid! you need to learn to use the hone thought, you need to slide the knife edge through the length of the hone, not on the same spot :) some tutorial videos will help

      Hi Kimochi! Thank you🙏 When I sharpen my knife using the honing steel, I slant my blade and go from one end to the other in single strokes. I actually learned from a chef who is a meat specialist.
