The Lebanese atayef are thin, folded pancakes filled with ashta, sprinkled with crushed pistachios and served with ater (sugar syrup with rose water). - 3 cups + 4 tbsp lukewarm water / ثلاث كبايات +اربع ملاعق كبار ماء فاتر
- 2 cups white flour, sifted / كبايتين طحين ابيض منخول
- 1/2 cup semolina no. 1 (fine ground) / نصف كباية سميده فرخة (ناعمة)
- 3 tbsp white sugar / ثلاث ملاعق كبار سكر
- 2 tbsp powdered milk / ملعقتين كبار حليب بودرة
- 1 tsp yeast / ملعقة صغيرة خميرة
- 1/2 tsp salt / نصف ملعقة صغيرة ملح
- 1/4 tsp citric acid powder (optional) / ربع ملعقة صغيرة حامض الليمون
- 1/4 tsp baking soda / ربع ملعقة صغيرة كربونات
- 1 tbsp orange blossom water / ملعقة كبيرة ماء زهر
