If I can advise you I would say go get the menu from the restaurant, the wine list and the drinks, learn everything thoroughly and go back to your boss and ask for a serious conversation! Tell him what you have done and let him test you! Tell him that you need to grow and you see yourself as a great waiter but that you are ready to start as a runner or even a busboy! Wait for his response and if it is negative you tell him that if he doesn't give you an opportunity you will start looking at other restaurants because you are determined to grow and have a better life! I assume he doesn't want to lose a good dishwasher and that is the reason he waves you off! Try this and I am pretty sure it will work! Just make sure you have really learned the menu before you go back and ask for the job!

I would suggest to any new waiter to take time and learn the food and the wines on the menu and the system in the restaurant so when you approach the guests you feel confident and comfortable on your place! The wines that carry the name of Cote du Rhone must be based on Grenache, Mourvedre and Syrah. No worries, mate. Years ago I was working in a restaurant on board a cruise ship. A couple of Bulgarian colleagues were sharing cabin with me. We lived together for months and I learned to recognize their accent. So it's just my acute senses that allow me to figure out where you come from. 99% of other people will not spot it and would not care either :)

I haven't even thought about it! now days the perception that white wine goes with fish and white sauces and red wine goes with red meat and red sauces is old-fashioned. There is such a diversity of white and red wine that you can pair it with anything and that is exactly what the guests are doing! If i have to point something I would say that we should avoid pairing bitter wines ( those with heavy tannin) with bitter food and that it is good to pair intense flavor food ( with a lot of seasoning for example) with intense flavor wine ( other way the test of the wine will be lost)! Pretty much anything else goes! To be honest I am using this old-fashioned style as a sell technique :) If the table is drinking white wine and they don't intend to order red but someone is having a stake or some heavy red sauce food, I ask if they don't want to switch to red wine for the main course! It works good in this cases but to suggest to the guests that their white wine don't go well with their meal....is, well we don't do that anymore :) But great question. The subject never crossed my mind and I didn't mention it in the video! Thanks, man! Take care!

Actually, basics are much longer! The basic wine course on the website will be at least 2 weeks so this is how it is. Wine is a huge topic!
